CREAMY MUSHROOM SOUP

All types of edible mushrooms contain varying degrees of protein and fibre. They also contain B vitamins as well as a powerful antioxidant called selenium, which helps to support the immune system and prevent damage to cells and tissues.
INGREDIENTS
- 1 tbsp butter + 1 tsp olive oil
- 1 onion thinly sliced
- 1 tbsp garlic cloves chopped
- 1 pkt button mushroom
- 1 tsp mixed herbs / oregano / thyme
- 1/2 tsp fennel powder
- 4 cup stock
- 2 tbsp maida
- 2 OR 3 tsp soya sauce
- 1 cup milk / coconut milk
- 1 tsp lemon juice/ vinegar /balsamic vinegar
- Salt to taste
- 1/4 tsp black pepper pwdr

Clean , wash and pat dry the mushrooms . Chop it .
Heat 1 tsp butter and stir fry 3 or 4 thinly sliced mushrooms and keep aside for garnish .
Heat 1 tsp oil + 1 tbsp butter.
Add onions + garlic and stir fry till light brown . [ caramelize the onion ]
Add mushrooms + thyme + fennels seeds pwdr ,mix well and stir fry till no moisture .
Add flour and stir fry for 2 mins .
Add stock and mix well.
Bring it to a boil .
Lower the flame , cover and cook for 5 mins /
Off the flame .
Cool it and grind into smooth mixture . [ if using hand blender then no need to cool ]
Transfer to a pan , add 1 cup milk and mix well.
Add soya sauce and mix well.
Bring to a boil and off the flame .
add vinegar or lemon juice and mix well .
Transfer to serving bowls and garnish with the fried mushrooms .
Serve hot .
