EGG APPE Chettinad Muttai Paniyaram Recipe is a traditional dish famous in the region of Tamil Nadu. It is a variation made  from a rice batter filled in with High protein egg and some extra spice to kick start your breakfast in a healthy way. These are very soft and fluffy . South Indian recipes are always a mixture of health and taste and so is this Paniyaram.

INGREDIENTS
  • idli batter – 1 cup
  • rava – 1/4 cup
  • egg – 2
  • salt
  • chilli paste – 1/4 tsp
  • oil – 1 tsp
  • mustard seeds – 1/4 tsp
  • fennel seeds – 1/2 tsp
  • finely chopped onion – 1
  •  finely chopped coriander leaves – 2 tbsp

NOTES
  1. When egg is added it gives a runny consistency to the batter so make sure your batter is thick enough. thats why I added sooji .
  2. Add freshly ground pepper powder instead of green chilli , it  gives a great flavour .
  3. You will not find much of egg flavour in this appe , it is very soft and fluffy.
  4. You can reduce onion and add other veges like carrot / beetroot /corn / cabbage.
  5. Instead of idli batter , just add only rice flour or any flour or sooji to give a stiff texture to these appes .
  6. When made only with egg they become flat .
