Egg sandwich
EGG SANDWICH
INGREDIENTS
- Hard boiled eggs – 2
- Bread slices – 4 [ brown or white ]
- Mayonnaise – 2 tbsp
- Pepper pwdr – ½ tsp
- Finely chopped coriander leaves – 1 tbsp [ optional ]
PREPARATION
- Boil the egg for 10 to 12 mins.
- Remove it from hot water and keep in cold water for few mins.
- Remove the shell.
METHOD
Take the boiled eggs in a bowl and mash it with a spoon or fork or grate it.
Add the mayo + pepper pwdr + coriander leaves and mix well.
Adjust salt if required.
Refrigerate the egg mixture for sometime before serving.
Chop off the sides of the bread .
Apply little butter on one side of each bread.
Spread evenly the egg mixture on one side of the bread and cover it with other bread.
Press it gently.
Slice the sandwich into rectangles or triangles and serve immediately.
NOTES
- Instead of mayo you can use dips of your choice.
- You can add finely minced garlic also ,I used garlic mayo.
- If you want to toast it then there is no need to refrigerate the egg mixture.
- Instead of pepper you can use chilli flakes .
- Taste and see if salt is required ,I did not add salt.
- Instead of boiling the egg ,you can also scramble the egg.
