Egg Kothu Idiyappam, a delicious breakfast/ dinner item made from the egg and idiyappam.

This recipe is such a versatile one, you can make it just with eggs like how I have prepared it here or if you like veggies, you can add that too. To make it faster, you can use one of those readily available idiyappam or sevai pack, cook as per the package instructions and use the same in the recipe. You can try this with ready made idiyappams/sevai  and that too tastes equally good as the home made idiyappam. But if you’re using ready made ones, make sure that you have added enough salt while cooking since most of the ready made sevai doesn’t has salt in it.  Now let’s see how to make this yummy egg scrambled idiyappam.

Notes:

  1. If you like, you can add the veggies like carrot & capsicum along with onions.
  2. Add less or more spices as per your liking.
  3. Don’t over cook the egg and make it dry , just when it starts to set, add the idiyappam.
  4. You can use readymade rice noodles or make homemade idiyappam.But I felt idiyappam will suit this better as it will absorb the flavour well.
  5. You can skip eggs and add parboiled / steamed vegetables.
  6. The sevai should not be too dry it should be slightly moist.
  7. Instead of sevai we can use cooked rice or thinly sliced chapatis noodles .
  8. If you don’t want to add eggs directly in the idiyappam mixture, you may scramble the eggs in a separate pan and add it to the mixture.
  9. Homemade idiyappam gives softest results.
  10. Use fresh ginger garlic paste for best flavor. 
  11. Briyani masala adds flavor and spice to the idiyappam.
  12. Serve hot. This tastes great as such, but if you want you can serve with COCONUT CHUTNEY .
