EGGLESS PIZZA MUFFIN

INGREDIENTS

  • Maida / APF – ¾ cup
  • Baking pwdr – ¾ tsp
  • Baking soda – a generous pinch
  • Mixed herbs / oregano / Italian seasoning – ½ tsp
  • Freshly grounded pepper pwdr / chilli flakes – as required
  • Curd – 2 tbsp
  • Milk – 6 tbsp
  • Olive oil – ¼ cup
  • Grated cheese any – ¼ cup
  • Boiled corn – 2 or 3 tbsp
  • Finely chopped onion – 1 tbsp [ optional ]
  • Deseeded tomato chopped – 1 tbsp [ optional ]
  • Chopped capsicum – 2 tbsp [red / yellow and green to add colour ]
  • Tomato ketchup – ½ tbsp
  • Salt to taste [ adjust accordingly as cheese also has salt ]
  • Muffin tray with liners or silicon moulds

PREPARATION

  1. Sieve twice maida + baking salt + baking soda and keep aside .
  2. Chop the veges very very finely . [ if adding red bell pepper then avoid tomato ]
  3. Grate the cheese .
  4. Either grease the muffin tray or line it with a lines or use silicon moulds .

METHOD

Take oil + curd + milk + ketchup in a mixing bowl and whisk / blend or beat it in mixer till all ingredients blend well.

Preheat the oven at 180 * C..

Add the sieved flour mixture + herbs + salt + pepper and mix well with a spatula .[ don’t whisk / beat / blend  after adding the flour OR  don’t over mix the batter just mix by cut and fold method ]

Add the cheese + corn + veges and mix it gently .

Spoon in the batter ,in the moulds upto ¾  giving space for it to rise .

Sprinkle some toppings + ketchup + cheese on the top .

Bake it in preheated oven for 10 – 15 mins @ 180 * C.

Start checking after 10 mins .

If the tooth prick comes out clean , it means it is done .

Allow it to cool and Serve hot with ketchup .

NOTES

  1. Just like pizza this also tastes better when hot so try to have it hot.
  2. Just like pizza we can add different toppings like chicken / paneer / olives etc .
  3. Instead of curd and baking soda add 1 egg [ beat it till fluffy and light ] .The egg version taste better and is more fluffy.
  4. You can make these muffins in advance ,while serving just microwave it .
