Healthy coriander soup
HEALTHY CORIANDER SOUP
INGREDIENTS
- Coriander finely chopped – 3 cup [ leaves + stalk ]
- Turmeric pwdr – ¼ OR ½ tsp
- Pepper pwdr – 1 tsp [ even whole black pepper will do]
- Jeera – 1 tsp
- Chaat masala as required
- Water – 3 cup or as required
- Few shallots – optional
- Chopped coriander leaves for garnish
- Lemon juice – 1 tbsp or as required
- Salt to taste
METHOD
Clean, wash and rinse the coriander leaves to remove dirt or soil from it. [ I have also used the stalk , not the roots ]
Pressure cook the leaves + water + pepper + jeera + shallots + turmeric pwdr + salt upto 5 to 6 whistles.
Allow the pressure to release .
Open and mash it a bit with a masher.
***** Don’t blend or grind it.
Add the lemon juice and mix well.
Serve hot by sprinkling chaat masala + coriander leaves . [ You can also sprinkle pepper pwdr while serving ]
NOTES
- Adjust ingredients as per your taste.
- You can add more ingredients of your choice for a tasty soup.
- Why not use vegetable stock instead of plain water.
- Even chicken stock will be yum. Either use maggi magic stock cubes or prepare the stock at home.
- Why not add a clove or small piece of cinnamom.
- Don’t grind.
- Finely chop the leaves as we are not grinding it .
- Incase a woman has heavy menstrual flow reduces the flow.
- It is used as detox diet.
- You can add few tbsp of cooked dal for thick consistency.
