Tomato onion coriander chutney recipe

                                                    TOMATO ONION CORIANDER CHUTNEY

INGREDIENTS
  • ·        Tomato – 4
  • ·        Onion – 2
  • ·        Coriander leaves chopped – ½ cup
  • ·        Red chilli – 5 to 6 or as per taste
  • ·        Salt as per taste
  • ·        Oil – 1 tbsp
  • ·        Mustard seeds + urad dal – 1 tsp
  • ·        Curry leaves – few
METHOD

Heat 1 tsp oil in a pan and fry the red chilli , keep aside. [ don’t burn it ]

Add the chopped onions and fry till translucent.

Add coriander leaves and fry till it shrinks.

Add tomatoes and fry till it becomes soft. [ don’t over cook it ]

Allow the mixture to cool and grind it together with fried chilli  + salt into a coarse paste. [ don’t add water ]

Heat 1 tbsp oil in a pan , add mustard seeds + urad dal + curry leaves.

When the dal browns , add the tomato paste and mix well and cook till oil separates.

Store in a container , it can be refrigerated for 2 days and used.

NOTES

1.     Instead of coriander leaves try mint leaves or curry leaves.

2.     Use shallots for more flavour.

3.     You can also add garlic .

4. I also tried adding sambar pwdr for variation
