Homemade instant jalebi recipe
HOMEMADE INSTANT JALEBI RECIPE / HOMEMADE JALEBI PREMIX RECIPE

Jalebi, also known as zulbia, jilapi, mushabak and zalabia, is an Indian sweet snack popular all over South Asia, and the Middle East. It is made by deep-frying maida flour batter in pretzel or circular shapes, which are then soaked in sugar syrup. This dessert can be served warm or cold.
INGREDIENTS
- Maida – 40 grms
- Besan – 5 grms
- Fine sooji – 55 grms
- Citric acid – ½ tsp
- Baking soda – ¼ tsp
- Eno – a pinch
- Yellow / orange food colour – a pinch
PREPARATION OF JALEBI PREMIX POWDER
Sieve together maida + besan .
Take maida + besan + sooji + citric acid + baking soda + food colour
Blend all in a mixie ,so that all blend well.
This is jalebi premix .store and use as required .
MAKING JALEBIS USING PREMIX POWDER.
FOR SUGAR SYRUP
Take 300 gm sugar in a pan add water up to the level of sugar . Once it starts boiling off the flame .
* You can add saffron / rose essence to the syrup.
METHOD
Take the mixture in a mixing bowl .
Add 100 or 125 ml water and make a smooth batter.
Make a thick dropping consistency batter.
*** if the batter is too thick ,the jalebis will be thick [not crispy ] and texture wise it will turn soft.If the batter is watery ,the jalebis will become flat .
Add eno, mix well and keep aside for 5 mins.
Meanwhileheat enough oil in a flat pan on medium flame .[ if you take less oil ,the jalebis will stick at the bottom and get burnt ,so take enough oil ]
*** While frying you can take half oil and half ghee.
Pour the batter in a jalebi maker bottle or sauce bottle or zip lock pouch with a hole or piping bag or cloth with small hole.
[ TEST – first by piping a small piece ,once done taste and check whether the texture is ok if not adjust the batter consistency ]
Now pipe in the batter in a circular manner with 3 or 4 layers .
Fry on both sides till it is crisp on medium low flame . [don’t brown it ]
***Oil has to be medium hot while frying.
Remove and immediately place it in the sugar syrup.
Press the jalebis in the sugar syrup , you will see bubbles .
Once it stops bubbling ,flip the jalebis and coat on other side .
Drain the excess syrup .
Garnish with saffron and finely chopped nuts and serve it.
Goes well with vanilla ice cream , rabri or fresh cream ,hotmilk .
