Coriander powder is widely used in south Indian preparations, especially rasam, kara kuzhambu, vegetable preparations, etc. It is an essential ingredient of many indian curries and gravies as it has a mild aroma that instigates the appetite. Coriander powder can be used in many different dishes. It is a basic ingredient for making the base gravy of most Indian dishes. Adding ground coriander powder imparts a pleasing taste to it

In Indian cuisine, these seeds are used extensively as whole or as ground coriander powder.

BENEFITS OF CORIANDER

  1. They help in maintaining your blood glucose that in turn prevent diabetes.
  2. It has many nutrients like Vitamin A, Riboflavin, Vitamin C and Folic acid.
  3. Helps in curing digestive problems.
  4. Is anti-inflammatory and cures skin problems.
  5. It is rich in dietary fiber and is an excellent source of minerals like Zinc, Potassium, Calcium, and many more.

The holistic science of Ayurveda preaches the use of coriander seeds or seed powder to cure stomach related ailments like constipation, indigestion, abdominal pain etc. Regular use of this super seed powder by infusing it in lukewarm water can even provide relief from abdominal cramps during menstrual flow.

NUTRITIONAL VALUE OF CORIANDER SEEDS

Enriched with the goodness of essential vitamins like vitamin A, C and K, minerals like manganese, iron, folate and potassium,  antioxidants and volatile oils like linalool, geraniol, a-pinene, camphene and terpene . Coriander powder holds high significance in treating a host of ailments including arthritis, pain, inflammation headaches , allergy, anaemia, hyperglycaemia, heart problems, skin conditions and even cancer.

Today because of fast moving lifestyle, most of us  tend to buy all the powdered spices  from stores.But still there are few among us who would prefer the age-old technique of grinding the seeds to get fresh powder right at home.Be it jeera , coriander, chilli, ginger or dried mangoes .

Unlike store-bought ones, homemade spice powders have a longer shelf life and are free of any adulterations in the form of preservatives or other additives. And moreover, they help bring out an enticing aroma and flavour of the food when added in the right quantity.

So, what are you waiting for, let’s prepare coriander powder right at home with the below given recipe .

INGREDIENTS

Dried coriander seeds – 1 kg [ Buy coriander seeds of best quality – it should be green in colour and should have a fresh aroma ]

NOTE – I also add 100 grms of jeera for 1 kg coriander seeds + 1 or 2 tsp turmeric powder . Turmeric is used as a  preservative and it enhances the colour of the powder .

SUN DRYING AND GRINDING METHOD 1 [ I FOLLOW THIS METHOD ] – As coriander powder is typically used while cooking, and will be cooked along with the dish it is added to ,so I follow this method .

Spread  the dhania seeds on a plate.

Pick it to remove stones or unwanted particles.

Cover the plate with a net or a thin cloth.

This way you can prevent the dirt from getting into the spice.

Keep this plate under the sun for 1 or 2 to 3 days.[ depending the sun rays ]

After 1 or 2  days, check if there is any moisture in them or not.

If you find a trace of moisture, then keep them to dry for another day.

-If you dry the coriander seeds in the sun, then you must take the plate inside the house in the evening.

ROASTING AND GRINDING METHOD 2 – While roasting the coriander seeds, you must not burn them.

Use a heavy bottom pan for roasting the coriander seeds. As they tend to burn easily, it is better to use a heavy bottom pan.

Heat the pan on medium heat and add the coriander seeds.

Keep stirring while roasting.

Keep evenly roasting them till you get a aroma of the seeds.

Be careful trhe colour should not change , else the powder colour will also change .

Once you see the aroma , switch off the heat and immediately  transfer the seeds to a  plate to cool them.

Once the roasted coriander seeds cools down completetly  to room temperature, transfer them to the grinder to make a coarse or fine powder. You can also use a spice grinder.

METHOD 3 – MICROWAVE

Place the coriander seeds in a microwave-friendly plate . Microwave the coriander seeds in 30 seconds intervals for 3 minutes which will completely dry the coriander seeds.

I keep a piece of asafoetida in each jar or packet . It helps as a preservative and i can store it for a long time .I usually store for an year

NOTES

  1. Make sure you roast the coriander seeds at medium heat as they tend to burn easily. Keep stirring the seeds for an even roast.
  2. If using a grinder to make the powder, double-check to see whether the seeds have completely cooled down. They should be at room temperature while grinding. If not, the seeds will release moisture, which will reduce the shelf life.
  3. Store the ground coriander powder in an air-tight container, preferably glass to keep them fresh for longer.
  4. Make coriander powder that will last up to a month or two, it’s how long the quality of your coriander powder will remain strong.
  1. Use freshly bought coriander seeds, the pungency and strength of flavour reduces with use time. 
  2. Store the spice powder in a moisture-free environment. 
  3. Use dry, glass bottle with a tight lid to store your coriander powder. 
  4. When using the spice powder, always use a dry spoon or have a spoon in the coriander powder container that is used for only this purpose.
  5. If you are using the sun to dry the coriander seeds, make sure to dry it in a clean place , where bird droppings, traffic fumes , dust , soil etc don’t fall on the coriander seeds at the time of drying .
