Idli manchurian
IDLI MANCHURIAN / IDLI CHILLI
INGREDIENTS
- Idli – 4 [ leftover idlis or idlis refrigerated for min 1 hr ]
- Ginger garlic paste – 1 tsp [optional ]
- Pepper pwdr / chilli pwdr – as required
- Corn flour – 1 tbsp
- Rice flour – 1 tbsp
- Red food colour – a pinch [ optional ]
- Oil to deep fry the idli
- Maida – 1 tbsp
- Olive oil / regular oil – 1 tbsp
- Ginger garlic finely chopped – 1 tbsp
- Onion diced and split – 1 small
- Capsicum diced – 1 small
- Chilli sauce – 1 tbsp
- Soya sauce – ¼ or ½ tsp
- Tomato ketchup – 2 tbsp
- Ajinomotto – generous pinch [ optional but it enhances the flavour ,if adding then adjust salt accordingly ]
- Spring onion leaves or coriander leaves finely chopped for garnish
- Salt as per taste

PREPARATION
- Cut the idlis either into small cubes or triangles.
- Mix the idlis with corn flour + maida + rice flour + chilli pwdr /pepper pwd + ginger garlic paste + colour + salt and mix well .
- Deep fry till golden brown and crisp .[ takes time ]
- Remove and keep aside .
METHOD
Heat oil in a pan.
Add chopped ginger + garlic and and fry .[should not change colour ]
Add diced onion and saute . [colour should not change ]
Add capsicum and fry for sometimes. [ it has to be crunchy not soft and colour should not change ]
Lower the flame and add all the 3 sauces + salt + ajinomotto and mix well .
Drizzle 1 or 1 ½ tbsp water and mix well .
Add the idlis and mix well till all the idlis get coated .
Off the flame and garnish with the greens . [ no need to cook further ,it has to be crispy ]
Serve hot as a starter .
NOTES .
- If you are using fresh idlis , let it cool and refrigerate it for min 30 mins. This helps to cut the idlis properly without any crumbles .

- Serve hot .
- Adding more soya sauce will make it black in colour .
- Adding colour to the idli while frying is optional but gives a nice attractive colour.I have not added.
- You can also add 1 tbsp corn flour mixed with 2 -3 tbsp water. Add this mixture after adding the sauces and cook it till the gravy becomes shiny ,then add the fried idlis .
- You can also shallow fry or bake the idlis instead of deep frying.
- Adjust sauces as per taste .
- You can also add a pinch of sugar.
- You can also use mini idlis and fry it without cutting.
- You can also add finely chopped green chilli with chopped ginger and garlic .
