LADWAN JA LADDU / SINDHI CHURMA LADDU / AATEY JA LADUN

Sindhi churma laddu

INGREDIENTS :-

• 2 cups coarse wheat flour 

• ½ cup besan flour 

• ½ cup clarified butter /ghee 

• 1 cup sugar powder (can increase the amount of sugar to your taste) 

• Oil for frying 

• ¼ tsp elaichi powder 

• ¼ tsp nutmeg powder 

• ¼ cup chopped dry fruits of your choice 

• 3 tbsp + ½ cup milk 

• 1tsp poppy seeds (optional) 

PROCESS

1. In a  mixing Bowl, mix wheat flour, besan, 3 tbsp milk and 4tbsp ghee… .mix nicely and keep aside atleast for half an hour. 

2. Mix the flour again and start kneading a tight dough (like bhakri, Koki) using warm milk.  

3. After kneading,  make equal 4 portions of the dough and roll each of them into a thick discs. 

4. Cut small square Muthiya like Shakkarpare. Deep fry them in hot oil Untill golden brown. Allow them to cool. 

5. Grind the these squares in mixie jar. 

6. Mix powdered Muthiya,  sugar,  dryfruits, elaichi powder, nutmeg powder and poppy seeds. 

7. Heat remaining ghee, add to laddu mixture.

8. Start binding the laddus. Garnish with chopped pistachio slivers. 

NOTE

  • You can make small Muthiyas of the dough instead of rolling and cutting squares. Many people make laddu that way also. The result will be the same. 
  • You increase or decrease the proportion of sugar and ghee according to ur choice. 
  • Kneading dough with milk gives better results, laddus remains softer…..but milk can decrease the shelf life of laddus so if you are making in large quantities please knead the dough with water.
