Each part of the drumstick tree — leaves, fruit, flowers and roots — is edible and has been used for generations. … It is deemed as a superfood. The flowers have such a delicate and soft texture, but once cooked, it takes a deeper robust flavour, similar to the taste of mushrooms.

The flowers of drumstick have several uses in the field of medicine and cosmetics.

Drumstick flowers are a rich source of amino acids, potassium and calcium, making them a vital supplement for nursing mothers. The best supplement for breastfeeding women as it helps increase the flow of milk and its nutritional value.

Flowers are brewed as a medicinal tea and consumed as a health tonic to treat urinary tract infections.

HOW TO USE THESE FLOWERS – The flowers have to be boiled for 2 to 3 times to remove the bitterness. Seasons first flowers are not very bitter , else they are very very bitter .

These flowers are very delicate, and when one goes to buy these from the market, you will get very few bloomed flowers, most of them are buds. Along with these you shall find broken thin stems. These stems have to be discarded.

 Swanjhre ji bhaji (drumstick flowers curry) is a delicacy and a speciality of the Sindhi Cuisine.
This curry can be made plain or sometimes we add lotus stem, green peas or varyun (dried lentil dumplings) for a variation. It goes well with fulko or dodho (bhakris) or khichni .

You can store the boiled flowers for a couple of days in the refrigerator or freeze them in a zip lock bag for later use. You can also sun-dry them and store in a jar. The dried flowers are also available in the Sindhi grocery stores but the curry made with these does not taste as good as the one with fresh flowers.

SINDHI STYLE DRUMSTICK FLOWERS RECIPE

INGREDIENTS

  • 250 gms drumstick flowers
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 1 tbsp ginger garlic green chilli paste
  • 1 green chilly, finely chopped
  • 2 finely chopped tomato
  • ½  tsp red chilly pwdr
  • 1/4 tsp turmeric pwdr
  • 1 tsp coriander pwdr
  • ¼ tsp garam masala
  • Salt to taste
  • Finely chopped coriander leaves  for garnish

PREPARATION

Heat water in a pan.Add the flowers .

Stir and boil for 5 mins.

 Drain the water.

Again boil water and add the flowers + salt and cook till soft .[ min ]

Drain the water through a colander .

Press and squeeze out all the excess water.

METHOD

Heat oil.

Add ginger garlic green chilli paste and stir fry for few seconds .

Add onion and sauté, till transparent.

Add tomatoes and stir fry till for a min .

Cover and cook for 2 to 3 mins. Stir in between .

Add spices and mix well .

Add the cooked  flowers, and mix well.

Cover and cook for  4 to 5  mins .Stir in between .

There should be no moisture in the dish, at the same time, it should be soft.

Finally sprinkle garam masala , give a mix and off the flame.

Garnish with coriander leaves.

Serve with rotis/ phulkas / parathas or even rice .

It goes well with fulko or dodho (bhakris) or khichni .
