Malai mushroom

                                                              MALAI MUSHROOM

INGREDIENTS

  • Button mushrooms – 20
  • Onion – 1 finely chopped
  • Ginger garlic paste – 2 tsp
  • Tomato puree – 2
  • Oil + ghee – 2 tbsp or as required
  • Jeera – 1 tsp
  • Red chilli pwdr – 1 ½ tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 2 tsp
  • Garam masala pwdr – 1/2 tsp OR KITCHEN KING MASALA – 1 TSP
  • Kasoori methi pwdr – 1 tsp
  • Tomato ketchup – 2 Tsp
  • Sugar – 1/2 tsp
  • Fresh cream – ¼ cup or less
  • Cashew paste – 5 or 6 cashews
  • Cooked green peas – ¼ cup [ optional ]
  • Finely chopped coriander leaves to garnish
  • Salt to taste

PREPARATION

  1. Clean ,wash ,rinse and pat dry the mushrooms .Slice each into 4 or 6 or as you wish .[not very thin as it shrinks ]
  2. Make puree of 2 tomatoes .

METHOD

Heat oil in a pan ,add jeera and let it splutter .

Add onion and fry till golden brown.

Add ginger garlic paste and fry till raw smell leaves.

Add tomato puree + salt and cook till oil separates .

Add chilli pwdr + coriander pwdr + garam masala pwdr + turmeric and mix well .

Add the mushrooms and stir fry for 1 min till it shrinks.

Add ketchup + sugar and mix well .

Add 1 cup of water and allow it to boil .

Once it starts boiling add green peas + cashew paste + fresh cream and mix well .

Simmer on low flame for 5 – 10 mins.

The gravy has to be of thick.flowing consistency.

Sprinkle kasoori methi pwdr and mix it.

Off the flame and garnish with coriander leaves .

Serve with khulcha  /naan / pulav / bread.

NOTES

  1. I did not add green pea
  2. U can reduce oil .
  3. I have use raw mushroom for garnish  – just for the click .
  4. Don’t chop the mushroom finely
