MANGO COCONUT BURFI / MANGO COCONUT VADI

INGREDIENTS
- Mango puree – 1 cup [ use sweet and fibreless mango ]
- Milk powder – ½ cup
- Freshly grated coconut – 3 cup
- Sugar – 1 cup
- Cardamom pwdr – ¼ tsp OR mango essence few drops
If the grated coconut is big in size , then pulse beat it once in mixie jar. You can also use dessicated coconut .
Adjust sugar as per taste depending on the sweetness of mango pulp .
METHOD
Make a fine puree of mango .You can strain it .
Transfer the mango puree to a broad thick bottom pan .
Add 1 cup sugar and mix until sugar dissolves completely on medium flame .
Add coconut and mix well.
Stir continuously and cook till the mixture thickens . [ 12 to 15 mins ]
The mixture will start leaving the edges of the pan.
Now add milk powder and mix well .
Add cardamom powder / essence and mix well.
The mixture will become like a big lump .
Off the flame .
Transfer the prepared mixture into a greased tray lined with baking paper
Allow it to set well .
Once it sets , slice into desired shape and size .
Burfi is ready to serve .
Store in airtight container for a week in the refrigerator.
