MEDITERRANEAN SALAD RECIPE

INGREDIENTS FOR SALAD

  • Cooked chickpeas – 2 cup
  • Deseeded tomatoes chopped – ½ cup
  • Cucumber finely chopped – ½ cup
  • Red bell pepper chopped – ½ cup
  • Capsicum – ½ cup
  • Yellow bell pepper – ½ cup
  • Crumbled paneer or feta cheese – ½ cup
  • Sliced black olives – 1/3 cup

METHOD

In a bowl combine all the above ingredients.

MEDITERRANEAN SALAD RECIPE

INGREDIENTS FOR DRESSING

  • Olive oil – ¼ cup
  • Lemon juice – 2 tbsp [as required]
  • Chopped coriander leaves – ¼ cup
  • Mixed herbs or oregano – 1 tsp
  • Pepper pwdr – ¼ tsp
  • Salt as per taste

METHOD

In a bowl whisk all the above ingredients for dressing.

Add this whisked mixture to the combined veges and mix well with clean hands.

Refrigerate for some time and serve .

MEDITERRANEAN SALAD RECIPE

NOTES

  1. I have also added purple cabbage + onion + boiled peanuts .
  2. You can add any cheese, I have added paneer + cheese.
  3. You can add veges of your choice.
  4. Quantity of ingredients can be adjusted as per your taste.
  5. I have also added yogurt + little sugar.
  6. You can also roasted skinless peanuts for crunchiness or even boiled peanuts.
  7. You can add stir fry chicken pieces or boiled egg.
  8. You can add vinegar or minced garlic or roasted cumin seeds pwdr for flavour
  9. Always use hands to mix the salad infact apply little pressure also , so that all the ingredients get mixed welland the flavour is infused.
  10. Chop the veges finely.
