Meethi chawal
SWEET RICE / ZARDA / MEETHI CHAWAL
INGREIDENTS
- Basmati rice – 1 cup
- Sugar – 1 cup
- Ghee – 2 or 3 tbsp
- Almonds – few soaked ,peeled and sliced
- Raisins + broken cashews – few
- Clove / laung – 4
- Cardamom – 4
- Food colour orange or yellow – as required
- Rose water – ½ tsp
- Boiled Milk – 1 cup
- Saffron – few strands
PREPARATION .
- Clean,wash and soak the rice for 30 mins. Cook the rice + food colour upto 80 %. Strain the rice and keep aside
- Mix milk + sugar + rose water + saffron in a bowl
METHOD
Heat the ghee in a small pan , add the clove + cardamom + cashew + raisins and fry for few seconds .
Off the flame, once the raisins puff . [ don’t burn ]
Allow it to cool.
Pour this into the milk mixture and mix well
Take a big pan layer half the rice at the bottom , drizzle half the milk mixture over the rice .
Now layer the remaining rice and repeat the procedure.
Cover the pan with a foil .
Heat a tava on high flame.
Reduce the flame to low and place the pan on it for dum.
Give it a dum for 10 – 12 mins.
Off the flame and allow to cool , open it after sometimes , mix with a fork .
Garnish with almonds and serve.
NOTES
- Instead of mixing the sugar with milk ,you can just sprinkle it over the rice while giving the dum .
