Mushroom manchurian
MUSHROOM MANCHURIAN
INGREDIENTS
- Button mushroom – 100 or 150 gms
- Corn flour – 2 tbsp
- Maida – 2 tbsp
- Rice flour – 1 tbsp
- Chilli pwdr – ½ tsp
- Ginger garlic paste – 1tsp
- Salt to taste
- Red orange colour – a pinch [optional ]
- Oil for deep fry
- Finely chopped garlic – 1 tbsp
- Onion cubed and shelled – ½ cup
- Capsicum cubed – ½ cup
- Chilli sauce – 1 ½ tsp or as per taste
- Soya sauce – 1 tsp
- Vinegar – ½ tsp
- Tomato ketchup – 2 tbsp
- Oil – 1 tbsp [preferably olive oil ]
- Finely chopped spring onion greens
PREPARATION
1 – Clean ,wash and rinse the mushroom to remove the impurities. Chop it into 2 or slice it into medium size. [while cooking it shrinks ,so don’t chop it finely ]Don’t have to discard the black part .Just trim the stem little.
2 – Make a thick batter of corn flour+ maida + rice flour + chilli pwdr + ginger garlic paste+ salt + colour + little water .
3 – Add chopped mushroom into it and keep aside for sometime or directly use it .
4 – Deep fry the mushrooms till golden brown and crispy . Remove on a absorbent paper and keep aside.
METHOD
Heat 1 tbsp oil in a pan ,add the chopped garlic and fry for few seconds.[ colour should not change and it should not get burnt ]
Add the onions and fry for few seconds .[ it should be crunchy ]
Add the capsicum and fry for few seconds.[it should not get cooked]
Add the chilli sauce + soya sauce + ketchup +vinegar and mix well.
Drizzle few drops of water and adjust salt if required.[over here instead of salt you can ajinomotto.
Add the fried mushroom and mix well till it gets coated well.
Off the flame and garnish with spring onion greens .
Serve hot as a starter or a side dish for any chinese main course.
NOTES
- You can also add 1 tsp cornflour mixed with 2 tbsp water towards the end and cook till the rawness of the cornflour leaves and the texture becomes shiny.
- Y not get garnish with finely chopped coriander leaves .
- Try to toss and cook .
- With garlic you can also add finely chopped green chilli .
- We can add little sugar but as v are adding ketchup it is not required.
- Adjust the quantity of sauces as per your taste.
- Adding a pinch of ajinomotto enhances the flavour.
- If you are using very small mushrooms then no need to chop.
- If u don’t have rice flour add 1 tbsp of more maida.
- You can also add ¼ tsp pepper pwdr.
- Instead of mushroom ,you can try paneer ,baby corn,chicken, boiled egg pieces ,soya chunks etc
- Fry only when you are preparing the dish or if you fry before it will become soggy.
