Navratan korma recipe
NAVRATAN KORMA [ NINE GEM ] RECIPE
Navratan korma is made using nine different vegetable ,fruits and nuts.I have used veges as per my taste.
INGREDIENTS FOR FRYING
- Potato – 1 big cubed
- Carrot – 1 big chopped
- Beans chopped – ½ cup
- Cauliflower chopped – ½ cup
- Cooked Green peas – ½ cup
- Capsicum cubed – 1 cup
- Paneer cubes – ½ cup
- Makhana [lotus seeds] – ½ cup [optional]
- Mushroom – 1 cup
- Oil to fry
METHOD
Chop the potato and soak it in salty water for some time.
Chop the cauliflower and soak in little turmeric + salt + water.
Clean, wash and pat dry all the above veges except paneer and mahkana and chop them .
Now one by one fry [deep fry or shallow fry] all the veges including the makhana and paneer separately till they are cooked.
The quantity of the veges will shrink after frying.
Keep aside .
INGREDIENTS FOR THE KORMA
- Oil + ghee or butter – 2 tbsp
- Few whole garam masala
- Onion – 1 big chopped
- Tomato – 2 chopped [optional]
- Ginger garlic paste – 1 tbsp
- Chilli pwdr- 1 tsp
- Coriander pwdr – 3tsp
- Garam masala – 1 tsp
- Turmeric pwdr – ½ tsp
- Orange food colour – ¼ tsp [optional]
- Salt as required
- Sugar – 1 tsp
- Cashew nut – ¼ cup
- Fresh curd – 1/2 cup [not sour]
- Kasoori methi pwdr – 1 tsp
- Fresh cream – few tbsp
- Finely chopped coriander leaves
- Fried red chilli for garnish
PREPARATION
Make a fine paste of onion + tomato + ginger garlic paste.
Make a fine paste of curd + cashew nuts [you can soak the cashew in hot water for sometime] Add little water.
METHOD
Heat oil + ghee , add the whole garam masala and let it splutter .
Add the onion + tomato + ginger garlic paste and saute till oil is released.
Now add the chilli pwdr + coriander pwdr + turmeric + garam masala and fry till raw smell goes .
Add 1 ½ cup water and allow it to boil .
Add the salt and sugar.
Once it boils add the fried veges potato + cauliflower + beans + green peas + food colour and mix well.
Add the curd + cashew nut paste stir and cook for few seconds.[cashew can stick to the bottom so keep stirring]
Add the fresh cream and mix well.
Add the kasori methi pwdr and stir well and off the flame .
Finally add the fried capsicum + fried paneer + fried makhana + fried whole red chilli.
Garnish with coriander leaves .
Ready to serve hot with basmati rice , naan , tandoori roti , chapatti, parathas , jeera rice.
NOTES
You dont have to cook for a long time as the veges are already cooked.
Instead of ghee you can use butter.
The curd should be fresh and not sour or it will give sour taste to the gravy.
You can avoid tomato and increase the quantity of onion.
Add veges as per your taste , even the quantity of veges can be of your choice .
Add water as per the consistency you want.
Instead of plain water you can add stock to enhance the flavour [veg or non veg]
You can also add baby corn or corn .
Instead of frying you can boil and cook the veges but fried veges gives more taste thats why I make this just once in a mnth.
Capsicum has to be added in the end .
You can also add soaked poppy seeds and soaked almonds while grinding the cashew paste for more richness.
You can garnish with fried dry fruits.
You can fry the onion + tomato and then grind it.
For dark colour you can fry the onion till dark brown in colour and then make a paste of it.
Instead of sugar you can add pineapple cubes or pineapple syrup.

VARIATION – If you have leftover korma just put it to dum with cooked basmati rice for 7-10 minutes.Take a thick pan add the korma then top it with cooked basamti rice place it on tava and give it a dum and your veg biryani is ready.
