STEP – 1

INGREDIENTS

  • Pork – 500 gms
  • Onion chopped– 1 big
  • Garam masala – ¼ tsp
  • Pepper pwdr – ¼ tsp
  • chilli pwdr – ¼ tsp
  • turmeric pwdr – ¼ tsp
  • salt – as per taste

METHOD

Chop the pork into small cubes.

Add all the above ingredients to the pork and mix well.

Keep it for marination in fridge for minimum 1 hr.

[I bought boneless pork with fat.add the fats also as it melts and gives flavour to the dish]

Pressure cook till the pork is cooked well and the fats become soft. [4 to 5 whistles]

STEP – 2

INGREDIENTS

  • Oil – 1 tbsp
  • Onion – 1 thinly chopped
  • Curry leaves – few sprig
  • Chilli pwdr – 1tsp
  • Garam masla – 1/2tsp
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ½ tsp
  • Pepper pwdr – ¼ tsp
  • Salt – as per taste

METHOD

Heat oil in a pan , add the onion + curry leaves and fry till golden brown in colour.

Make the flame low and add all the other ingredients chilli pwdr + garam masala + turmeric pwdr + coriander pwdr + pepper pwdr + salt and fry it well.

Add the cooked pork .

Cook till all the water completely dries up.

Garnish with curry leaves

NOTES.

  1. The same recipe can be used for chicken and mutton roast also.
  2. You can also add tomatoes.
  3. You can also add few green chillies.
  4. Use south indian shallots for more taste
  5. You can garnish with fried coconut bits.
  6. The pork meat has to be cooked well.
  7. Purchasing Pork  – While buying pork, search for an even pink colour and a thin rim of fat around the edge of the meat. Look for firm cuts with lower fat content like the loin or leg.
