Rava Appe, Rava Paniyaram or Sooji Appe is an Instant South Indian breakfast dish which is delicious and very easy to make. Here is how to make it.

SOOJI APPE RECIPE

INGREDIENTS

  • Rava – 1 cup
  • Curd – ½ cup
  • water – 1/2 cup + 1 or 2 tbsp
  • Finely chopped onion – 1 small
  • Finely chopped green chilli – 1 or as per taste
  • Grated ginger – ½ tsp
  • Finely chopped coriander leaves – 2 tbsp
  • Fennel seeds [ saunf ] – 1/2 tsp
  • 1/2 tsp mustard seeds
  • Oil – 1 tsp
  • Salt as required
  • Baking soda – 1/4 tsp OR 1 tsp eno pwdr
  • Grated carrot – 2 tbsp [ optional ]
  • Oil for frying the appe
  • Appe pan

NOTE we can add little turemeric also .

METHOD

Take rava in a bowl and add curd to it and mix well .

Keep aside for 20 – 30 mins.

Heat oil in a small pan add the fennel seeds and allow it to crackle.

Add onions + green chilli and fry till translucent.

Add this mixture to the rava.

Add grated carrot + coriander leaves + ginger + salt and mix well

Add little water and bring the batter to the consistency of idli batter, not very thick or thin.

Heat the appe pan.

Add soda / eno and mix the batter well .

Once hot , pour little oil in each mould.

Pour the rava batter in each mould , fill up to ¾ .

Make the flame low.

flip after 1 min.

Cook for 2- 3 min .

Flip again and cook till golden brown .

Remove and serve hot with any chutneys or sauce.

NOTES

  1. Instead of baking soda we can add eno or fruit salt .
  2. We can also roast the rava .
  3. If you flip after the bottom becomes golden brown , then the other side will become flat ,but if you flip it when it is half done then the other side will also take the shape of the mould.
  4. You can add curry leaves or peas or cheese or tomatoes or any other stuffing.
  5. While tempering you can also add mustard seed and urad dal .
  6. You can ferment it for more than 30 mins.
  7. The same batter can be made little thin to make uttapas.
  8. tip **Cook for 1 min  [once the bottom takes the shape of the mould ] ,flip it and cook on other side for 2 mins till golden brown .Again flip and cook on the cooked side till golden brown.We do this to get round appe ,else the appe will be flat on one side.
