RAW PEANUT BURFI / SHINGDANA BURFI

Peanuts are as popular as they are healthy. They’re an excellent plant-based source of protein and high in various vitamins, minerals, and plant compounds. They can be useful as a part of a weight loss diet and may reduce your risk of both heart disease and gallstones.
If you eat peanuts every day you get protein, vitamins, minerals, and more! Peanuts have more protein than any nut (7g per serving), containing more than 30 essential vitamins and minerals, and are a good source of fiber and good fats.
INGREDIENTS
- 150 grams raw peanuts shelled
- 75 grams sugar
- ¼ cup Water
- 1 tbsp condensed milk OR 2 tbsp milk powder
- 3 ghee
- ¼ tsp cardamom pwdr
- 2 drops of rose essence [ optional ]
- greased tray
METHOD
Wash all raw peanuts and shell the peanuts .
Transfer peanuts in mixer and pulse beat into coarse mixture .
Now heat 3 tbsp ghee in a pan.
Add crushed peanuts and mix well .
Stir and cook at low flame till it turns light brown in colour.
Stir continuously while cooking . [ 4 – 5 mins on medium flame ]
OFF THE FLAME .
Now take sugar + ¼ water in a pan.
Stir continuously and cook on low flame .
Make one string sugar syrup .
Now add cooked peanuts and mix well.
Stir continuously and cook till all ingredients blend well .
Add milk powder + crushed cardamom.
Stir continuously and cook for 2 minutes on low flame and off the flame .
Spread this mixture in the greased tray and spread evenly using spatula.
Start levelling using a greased spatula / flat bowl .
Sprinkle some chopped fried peanuts/ pistas / rose petals etc
Press lightly .
Give slits with knife in desired shape and sizes .
Allow to cool till it sets properly for 1 or 2 hrs .
Ready to serve .
