INGREDIENTS

  • Spaghetti cooked – 2 cup
  • Mushroom chopped – 1 cup
  • Green capsicum chopped – ½
  • Red bell pepper chopped – ½
  • Yellow bell pepper chopped – ½
  • Broccoli chopped – ½ cup
  • Olive oil – 1 OR 11/2 tbsp
  • Butter – ½ tbsp
  • Garlic finely chopped – 5
  • Pepper pwdr – ¼ tsp
  • Chilli flakes – ½ tsp
  • Mixed herbs or oregano
  • Salt as per taste
  • Grated Parmesan cheese – ¼ cup

Boiled spaghetti

PREPARATION

  1. Boil the spaghetti with salt till they become soft. [ 10 -12 minutes]. Check after 8 mins ,if they are crunchy cook more till it becomes soft. While boiling keep stirring inbetween so that they don’t stick. Drain and rinse in cold water and again drain using  a strainer.Keep aside.
  2. Chop the broccoli and soak in salt water.
  3. Stir fry all the veges – capsicum , bell pepper , broccoli ,and mushroom separately as their cooking time is different. [you don’t have to saute till its fully done ] Keep it aside.

METHOD

Heat oil + butter in a broad pan .

Add the chopped garlic and saute on low flame.

Add  the chilli flakes and stir.

Add  the cooked spaghetti and mix well so that it gets coated with the oil full of garlic and chilli flakes flavour .

Add the fried veges , adjust salt and mix well.

Add the pepper pwdr + mixed herbs and mix well.

Cook for few seconds.

Off the flame and serve hot.

While serving garnish with grated parmesan cheese.

NOTE

Don’t reduce the quantity of oil, as there is no sauce.

You can add soya sauce .

Together with veges you can add tofu or paneer or spring onion or broken basil leaves.

Don’t over cook the spaghetti.

Cooking time of spaghetti depends on the quality and thickness of it.

As it takes long time to cook , you can soak the spaghetti for sometime.

I have chopped the veges you can cut into thin strips.

You can add roasted sesame or crushed peanut.

Don’t overcook the veges ,they have to be crunchy.

Non vegetarians can add boiled and shredded chicken or scrambled egg.

I first sauted the veges separately but you can continue after adding the garlic ,add the veges and fry.

I don’t add oil while boiling the pasta .If the pasta gets coated with oil layer ,it will not absorb the flavours of other ingredients. if you want you can add oil.
