Tomato soup

INGREDIENTS

  • Tomato roughly chopped – 3 big Ripen [ NOT SOUR]
  • Bread slice – 2
  • Beet root – a small piece
  • Onion sliced – 1 small
  • Butter – 1 tbsp
  • Bay leaf – 1
  • Garlic – 2
  • Clove – 1
  • Cinnamom – 1 small piece [ ¼ inch ]
  • Sugar – 1/4 tsp
  • Veg stock – ½ or 1 cup [ use maggi cube] optional or plain water will also do
  • Corn flour – 2 tsp. [ mixed with 1/4 cup water ]
  • Pepper pwdr as required
  • Fresh cream 1 tbsp  for garnish [ optional ]
  • Few bread cubes fried or toasted to be added in the soup while serving
  • Salt as per taste

 PREPARATION 

  1. Mix cornflour with 1/4 cup water .
  2. Mix 1 magic cube in 1 cup hot water.
  3. Toast a bread till crisp on both sides  and slice it into small cubes.

METHOD

Heat 1 tbsp butter in a cooker.

Add cinnamon  + bay leaf + clove + garlic and stir.[no need to fry ]

Add garlic and stir . [colour should not not change ]

Add the onion and fry till translucent .

Add the tomato and beetroot and mix .[ dont fry ]

Immediately add 1 1/2 cup water +  salt + sugar .

*** If using magic cube ,add less salt .

Pressure cook upto 3 whistles.

Once pressure releases , remove and discard the bay leaf , clove and cinnamom .

Blend the cooked tomatoes and strain it through a strainer.

*** If using mixer ,allow the tomato to cool.

Take this mixture + veg stock + 1 cup water or in a pan.

*** add water as per the consistency ,you want .

Keep the mixture to boil .

Once it starts boiling , add the cornflour mixture to it and mix well.

Simmer the soup for 2 or 3 mins .

Off the flame and add pepper pwdr , mix well and off the flame.

Garnish with fresh cream .

Add the bread croutons and serve hot .

You can also serve with with toasted garlic bread or bread stick .

NOTES

  1. Use ripe tomatoes.
  2. You can add little sugar.
  3. You can add 1 tbsp of moong dal for a nice texture.
  4. You can also add carrot .
  5. Beetroot gives nice colour to the soup.
  6. You can also roast the tomatoes for a different taste.
  7. You can also add fried onion.
  8. Don’t use sour tomatoes.
