VEG MANCHURIAN BALLS

INGREDIENTS

  • Finely chopped or grated cabbage – 1 or 11/2 cup
  • Grated or finely chopped carrot – ½ cup
  • Finely chopped French beans – 1/4 cup
  • Spring onions finely chopped [not the greens] – ¼ cup
  • Salt as per taste
  • Ginger garlic finely minced – 1 tbsp
  • Pepper pwdr – 1/2 tsp
  • Cornflour – 3 tbsp
  • Maida – 3 tbsp.
  • Oil for deep frying

METHOD

Take the veges ,add salt to it and mix it well by putting pressure with your palms so that the veges release water.

Now add the other ingredients except oil and mix well.

Knead it into a dough like mixture. [knead without water]

Divide the dough into equal portion of lemon size.

Roll each portion into round balls.

Deep fry the balls on medium flame .

Keep turning with a fork and fry till crispy and golden from all sides.

Drain and remove on absorbent paper.

NOTES

If the oil is very hot the balls will burn from outside and remain uncooked from inside.

If the oil is not hot then the balls will absorb oil.

You can also add a pinch of ajinomoto.

                                        FOR THE MANCHURIAN GRAVY

INGREDIENTS

⦁ Oil – 2 tbsp
⦁ Garlic – ¼ cup
⦁ Green chilli finely chopped as per taste
⦁ Cubed capsicum – ½
⦁ Onion cubed – 1/2 cup
⦁ Soya sauce – 2 or 3 tsp
⦁ Schezwan sauce – 1 tbsp
⦁ Red chilli sauce – 1 tbsp
⦁ Ketchup – 1 tsp
⦁ Sugar – ½ tsp
⦁ Water – 3 cups
⦁ Corn flour slurry – 2 tbsp + 1/4 cup water
⦁ Salt to taste
⦁ Black pepper powder – 1/4 or 1/2 tsp
⦁ Ajinomoto – 1/8 tsp [ optional ]
⦁ Spring onion greens – to garnish

METHOD

Heat oil in a pan.

Add the onions + ginger + garlic + green chilli and stir fry on high flame.

Add water + soya sauce + pepper pwdr  +sugar + salt + vinegar ,mix well and allow it to boil for 1 min.

Add the corn flour mixture and boil till the gravy thickens and the colour changes.

Add the fried balls and simmer for 1 min.

Remove flame .

Garnish with spring onion greens.

Serve hot with Chinese rice or noodles.

NOTES

  • Instead of plain water use vegetable stock for more flavour .
  • For thick gravy use more corn flour ..
  • For Indian taste add finely chopped coriander leaves.
