INGREDIENTS

  • Basmati rice – 1 cup [ aged ]
  • Water – 2 ¼ cup
  • Mixed veges chopped into medium size – 2 cup [ potato + green peas + beans + cauliflower + carrot ]
  • Oil + ghee – 2 tbsp or more
  • Few whole garam masala – sai jeera + bay leaves + clove + cardamom + peppercorn + star anise + cinnamom
  • Onion – 1 big sliced
  • Green chilli – 1 slit
  • Tomato – 2 big chopped
  • Ginger garlic paste – ½ tbsp
  • Mint leaves + coriander leaves finely chopped – ½ cup
  • Red chilli pwdr – 1 ½ tsp or as per taste
  • Coriander pwdr – 3 tsp
  • Turmeric pwdr – ¼ tsp
  • Garam masala – 1 tsp
  • Curd – ¼ cup
  • Salt to taste
  • Fried cashew + finely chopped coriander leaves for garnish

PREPARATION

Clean , wash , rinse and soak the rice for 20 – 30 mins .

METHOD

Heat oil +  ghee in a heavy bottom pan , add the whole garam masala and allow it to sputter . [ never allow the garam masala to burn or it will give a bad aroma to the food ]

Add onion and fry till golden brown.

Add ginger garlic paste and fry till raw smell leaves.

Add tomatoes  + green chilli and fry till it becomes soft and oil separates.

Add chilli pwdr + coriander pwdr + garam masala pwdr + turmeric , mix well and fry till raw smell leaves.

Add coriander leaves + mint leaves and fry till it it shrinks.

Add the veges ,mix well and saute for a min.

Add curd and mix well .

Drain the excess water from the soaked rice and add it .

Mix well and add 2  cup of water + salt , mix well .

Cover and cook till water evaporates on medium flame .

Once the water evaporates , place a tava below it .

Lower the flame and cook for  2 – 4 mins.

Off the flame.

After sometime open the lid and fluff it with a fork .

Garnish with fried cashew and coriander leaves .

Serve with salad + pickle + papad + any side dish.

NOTES

  1. For any rice recipe , soaking the rice for 20 mis is a must .
  2. Use a good quality basmati rice .
  3. Together with the veges we can also add soya chunks to get soya chunks biryani .[ boil soya chunks for 10 minutes before adding ]
  4. Use hot water to reduce the cooking time.
  5. Don’t reduce ghee but you can add more .
  6. You can also use a cooker and pressure cook upto 2 -3 whistles.
  7. You can add 1 tsp of sugar.
  8. You can also add lemon juice.
  9. You can also add fried paneer pieces /mushroom  in the end.
  10. Use a good quality garam masala or any branded biryani masala and adjust other masala pwdrs accordingly.
  11. If complete water evaporates and the rice is not cooked ,you can sprinkle little water.
