                                   CABBAGE STIR FRY / CABBAGE PORIYAL

INGREDIENTS

  • Cabbage – 2 or 3 cup grated
  • Coconut oil /oil  – 1 tsp [optional ]
  • Oil – ½ tbsp for tempering
  • Onion – 1 finely chopped
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Green chilli – 1 chopped or as per taste
  • Freshly grated coconut – 1/4 cup
  • Salt as per taste

PREPARATION

Discard  the outer covering of the cabbage and chop it finely or grate it. [I have grated]

Cabbage stir fry -Kerala style .

METHOD [Kerala style ]

Take cabbage + onion + grated coconut + green chilli + salt + curry leaves + coconut oil.

Mix well with your clean hands .[you can mash it a bit with hands ]

Heat oil in a pan and add mustard seeds.

Let it crackle.

Add the cabbage mixture and mix well .

Stir fry for 2 to 3 minutes and off the flame.[it should not become soft but have crunchy texture ]

Serve as side dish for chapatti or rice with any gravy or just as a salad.

**** Note there is no need to add water ,while mixing the cabbage with hands it releases water]

METHOD SIMPLE STIR FRY [  Tamil Nadu style ].

INGREDIENTS

  • Cabbage – 2 or 3 cup grated
  • Oil – 2 tsp
  • Onion – 1 finely chopped
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Green chilli – 1 chopped or as per taste
  • Freshly grated coconut – 1/3 cup
  • Salt as per taste

METHOD

Heat oil in a pan.

Add mustard seeds and let it crackle .

Add curry leaves + onion + chilli and fry till onions turn translucent.

Add the grated cabbage + salt  and mix well.

sprinkle little water if required .

Cover and cook for 2 or 3 minutes. [stir in between ]

Open the lid ,give a nice stir .

Garnish with coconut and mix well .

Off the flame.

Serve as side dishfor chapatti or rice with any gravy or just as a salad .

**** I have not added water while cooking ,as the cabbage is grated finely ,it cooks fast – if you have chopped then sprinkle little water .

NOTES

  1. It does not take much time to cook as it is grated.
  2. Coconut oil enhances the flavour.
  3. You can also add turmeric pwdr.
  4. You can add grated carrot together.
