ELANCHI / PATISHAPTA / CREPES  OR PANCAKES STUFFED WITH COCONUT FILLING / MADAKKU SAN RECIPE.

INGREDIENTS FOR THE BATTER

  • Maida – 1cup
  • Water enough to make loose batter
  • A pinch of salt

METHOD

Mix the flour + salt + water and make a smooth loose batter .

The batter should be thinner than the dosa batter.

INGREDIENTS FOR THE FILLING

  • Grated coconut – 1 cup
  • Powdered Sugar – 2 or 3 tbsp [as per taste] OR grated jaggery as required
  • Cardamom pwdr – 1 pinch
  • Roasted white sesame seeds – 1 tbsp

METHOD

Mix coconut + sugar + cardamom pwdr thoroughly.

METHOD FOR MAKING THE STUFFED CREPE/PANCAKE

Heat a non stick pan on medium flame.

Pour a ladle of batter in the center and spread it into a thin circle like dosa with the back of the ladle.

Once it is cooked on one side, place in 1 tbsp of the coconut filling either in the center or in the corner.

Allow it to cook for 1-2 minutes till brown spots appear below [don’t burn it] , the crepe becomes little crispy and the sugar also melts a bit .

You can drizzle little ghee on the edges of the crepe.

If you have placed the filling in the center  then pack it from left and right side OR  if you have placed the filling in the corner then roll the crepe.

Serve it.

VARIATIONS

  1. You can add 1 egg to the batter.
  2. You can add turmeric pwdr to the batter.
  3. You can also make the batter with maida + rice flour + fine semolina.
  4. You can heat the sugar with coconut for the filling. [I have used raw]
  5. You can also make the filling with coconut + jaggery.Cook the coconut and grated jaggery together,till the jaggery melts.
  6. You can add fried and chopped cashew + raisins to the filling.
  7. Instead of cardamom you can add 1-2 drops of vanilla essence or nutmeg pwdr.
  8. You can also use dessicated coconut.

NOTES

  1. The whole process has to be done on medium flame.
  2. Kids kove it.
  3. The tava has to be hot while spreading the batter.
  4. Each time while spreading the batter, wipe the hot tava or pan with a wet cloth.
