Broccoli spinach almond soup
BROCCOLI SPINACH ALMOND SOUP

The Broccoli spinach almond soup recipe is a wholesome soup packed with nutrients. In this recipe, broccoli is roasted in a pan until soft along with garlic , ginger and other ingredients .Almonds give it a creamy texture.
Broccoli is a good source of fibre and protein, and contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins including folic acid.
Broccoli has a reputation as a superfood. It is low in calories but contains a wealth of nutrients and antioxidants that support many aspects of human health.
INGREDIENTS
- Broccoli florets – 2 cup
- Spinach leaves – 15 nos
- Almond powder – 2 tbsp
- Milk – ½ cup
- Stock / water – 3 cup
- Oil – 2 tsp
- ginger garlic minced – 1 tbsp
- bay leaf – 1
- onion thinly sliced – 1 small
- coriander leaves with stems chopped – 2 tbsp
- salt to taste
- pepper pwdr – ¼ tsp

METHOD
Cut the broccoli in to small florets , soak in salt water for sometimes. Wash and drain the water.
Prepare stock at home or use a maggi magic cube and dissolve it in 3 cup of hot water .
Heat oil in a pan ,add ginger garlic and bay leaf and stir fry for few seconds.
Add onion and coriander and stir fry till translucent .
Add the broccoli + salt and stir fry for 4 mins.
Add the spinach and give a mix .
Add the water / stock .
Once it comes to a boil , add the almond powder and give a mix .
Let it cook for 4 to 5 mins.
Strain the soup , discard the bay leaf .
Transfer the broccoli and spinach to mixie jar and grind into fine paste .
Strain the paste into the soup and mix well.
Transfer to a pan and add milk .
Adjust water or milk as per the consistency you want .
Once it comes to a boil off the flame
Add pepper pwdr and give a nice mix.
Serve hot
NOTES
- Instead of cooking in open pan , you can pressure cook .
