BAJRA BADAM SOUP

The bajra badam Soup Recipe is a wholesome high fibre and protein rich recipe that you can serve for a one dish lunch or dinner. It also makes a great Indian diabetic lunch or dinner giving you all the added nutrients.

It  is a wholesome high protein soup that is packed with flavour. The addition of vegetables to the soup makes it packed with nutrition and taste.

Also known as pearl millet, Bajra is a power packed grain and can also be called a superfood. Loaded with insoluble fiber which helps in losing weight, reducing cholesterol and reducing blood sugar levels.

INGREDIENTS

  • Bajra dalia – ¼ cup
  • Badam / almond paste – 2 or 3 tbsp [ 12 to 15 badams ]
  • Mixed veges 1 cup [ cabbage/beans/cauliflower/carrot etc ]
  • Finely chopped coriander leaves with tender stems – 1 tbsp
  • Veg stock / water – 2 cup
  • Butter – 2 tbsp
  • Onions sliced – 1 small
  • Finely minced garlic – 1 tsp
  • Salt to taste

PREPARATION

  1. Soak badam in hot water for 15 to 20 minutes.
  2. Remove the skin from the almonds and blend to make a smooth paste of the badam.
  3. Wash the bajra well. Pressure cook it with 1 cup water . First whistle on high flame , then lower the flame and cook for 10 mins .
  4. For stock I have used maggi magic cubes . dissolve the cube in 2 cup of hot water and use as stock .

METHOD

Heat butter in a pan ,add onions + garlic + coriander leaves and stir fry for a min  .

Add the veges and stir fry for 2 mins .

Add the cooked bajra and mix well  .

Add the 2 water / stock  + badam paste  and mix well .

Adjust salt .

Bring it to a boil .

Simmer for a min on low flame and off .

Serve hot .

Sprinkle pepper pwdr while serving .

NOTES

Instead of using bajra daliya , we can use bajra flour .Just dilute ¼ cup of bajra flour in 2 cup of water and blend it . add it to the soup and cook.Same can be done with ragi /jowar or other millets .

BENEFITS

Bajra is rich in magnesium, which helps keep the heart healthy. It has potassium, which dilates blood vessels, allowing blood to flow more easily. This helps reduce overall blood pressure. Bajra also has fibre that helps reduce LDL, or bad, cholestrol.
