Masala fish fry
MASALA FISH FRY
INGREDIENTS
- Fish – 300 gms
- Onion – 1
- Tomato – 1
- Ginger garlic paste – 1 tsp
- Red chilli pwdr – 1 ½ tsp
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 2 tsp
- Garam masala – ¼ tsp [ optional ]
- Tamarind – marble size
- Curry leaves – few
- Oil – 1 ½ tbsp
- Fenugreek seeds – ¼ tsp
- Coriander leaves finely chopped for garnish
- Salt to taste
PREPARATION .
- Clean, wash and rinse the fish. Marinate with little salt and turmeric and keep aside for sometime.
- Soak tamarind in hot water and extract juice.
- Make a fine paste of onion + tomato + ginger garlic paste.
METHOD
Heat oil in a pan, add fenugreek seeds and fry for few secs .[ it should not burn else it will give a bitter flavour to the food.
Add curry leaves + the paste .
Stir fry till raw smell leaves and oil separates .
Add chilli pwdr + turmeric + garam masala + coriander powder and fry.
Add tamarind juice and mix well and cook for 1 min.
Add ½ cup of water + salt and allow it to boil.
Once it starts boiling ,lower the flame to medium low.
Now add the fish pieces, cover and cook for 5 mins.
Now turn the fishes and again cover and cook for 5 mins.
Now open the lid and cook till complete water evaporates and oil appears on the sides.
Off the flame and garnish with more curry leaves and coriander leaves.
Serve as a side dish.
NOTES
- Instead of tamarind you can use kokam ,lemon or vinegar.
- Adjust masalas as per your taste.
- I used one big slice of surmai which was more than 300 gms.
- Use fish of your choice.
- Same recipe for prawns or crab.
