BENGALI MISHTI PULAO / BASANTI PULAO
Bengali Holud Mishti Pulao Recipe (Saffron Flavored Rice With Nuts Recipe) is a Bengali flavored rice tossed with toasted nuts like cashew nuts, almonds, pistachio and raisins and flavored with saffron.
Every meal in Bengali cuisine should have this as their main course to be served along with a side dish or Non-vegetarian gravy.It is mainly prepared during the festival of Dussehra for Durga Pujor Bhuri Bhoj. The few fragments of saffron added to the rice gives a wonderful fragrance and the slight touch of sweetness in the rice will compliment with the spicy dishes that will be served along with the rice.
INGREDIENTS
- 1 cup short grain rice / gobindobhog rice
- 1 tbsp ghee
- 1 tsp ginger garlic paste
- cardamom – 3
- cinnamon- small piece
- cloves – 3
- bay leaves – 1
- star anise – 1
- black cardamom – 1
- sai jeera – ¼ tsp
- salt
- sugar – 2 tbsp
- cashew nuts – 1 tbsp
- raisins – 1 tbsp
- green chillies – 3
- water – 2 cup
- saffron – few strands soaked in 1 tbsp hot water

METHOD
Wash the rice and soak in enough water for 30 minutes.
Heat ghee in a pan.
Add raisins and cashew nuts and fry until golden brown.
Add cardamom, cloves, cinnamon stick and bay leaf and fry for a few seconds.
add ginger garlic paste and stir fry till raw smell leaves .
Drain the rice and add it in the pan.
Mix well see that the rice gets coated with the masala.
add saffron + sugar and give a mix .
Add 2 cup water + salt and mix .
cook on medium flame till water comes to the rice level .
Simmer the heat to low.
Cover and cook the rice until all the water is absorbed and the rice is cooked.
[ You can place tava below the pan ]
off the flame and let the rice rest for 5 minutes.
Fluff the rice gently with a fork.
Garnish with the fried cashews and raisins.
Serve hot.
