Carrot halwa recipe
GAJAR KA HALWA
Gajar ka halwa, also known as gajorer halua, gajrela, gajar pak, and carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly.
INGREDIENTS
- Red carrot – 1 kg
- Milk – 3 cup
- Green cardamom powder – 1 tsp
- Ghee – 5 tbsp or more
- Sugar – 1 ½ cup or as per taste
- Badam – ¼ cup
PREPARATION –
- Soak the badam in hot water for few hours.Peel the skin.and slice it thinly.
- Peel the carrot and grate . Squeeze the excess water from it .
METHOD
Heat the ghee in a heavy bottomed pan.
Add the grated carrot and fry for 10 mins on low flame till the raw smell of the carrot disappears.
Add the milk and mix well.
Stir and cook till the milk completely evaporates.
Add sugar and cardamom pwdr and cook till it turns reddish in colour and thickens.
Off the flame
Garnish with badam
Serve hot or chilled.

NOTES
- Cook on low flame and fry the carrot well or your halwa will have raw taste.
- Squeezing excess water helps reduce cooking time .It is optional .Water squeezed should not be thrown – use it for kneading dough /making soup /juice etc .
- You can also add khoya .
- Instead sugar you can use milk maid.
- Milk pwdr gives more taste.
- You can even give different shapes to the halva and serve
- You can also make it in pressure cooker.
