Carrot idli
CARROT IDLI
INGREDIENTS
- Idli batter – 2 cup
- Finely grated carrot – ¾ cup [ I used cheese grater ]
PREPARATION
- For idli batter refer here – Batter for soft idlis
- You can either finely grate the carrot or blend it in the mixer. If it is very juicy then squeeze it .Batter should not become very watery.
METHOD
Mix the idli batter + grated carrot well.
Heat the steamer with water in it.
Grease the idli moulds with oil and pour enough batter in the moulds .
Keep it for steaming for 8 – 10 mins .[don’t over steam ]
Allow it to cool for 2 – 3 mins.
Remove it with a knife or spoon .
Serve hot with any SouthIndian accompaniments .
VARIATIONS – You can also temper the batter with oil + urad dal + curry leaves + asafoetida .
NOTES
- Add a pinch of baking soda to the batter for spongy idli.[optional ]
- For spicy idli you can grind a green chilli with the carrot .
- Also u can grind jeera or onion for more flavour.
