CHICKEN LAHORI TIKKA / MURG LAHORI TIKKA / LAHORI CHICKEN TIKKA

Chicken tikka is a chicken dish originating in the Indian subcontinent , the dish is popular in India, Bangladesh and Pakistan. It is traditionally small pieces of boneless chicken baked using skewers on a brazier called angeethi after marinating  in India spices  and dahi  (yogurt)—essentially a boneless version of tandoori chicken. The word tikka (Tike in Turkish, and Tikə in Azerbaijani) is a Hindi and Urdu word and means “bits” or “pieces”. It is also a chicken dish served in Punjabi cuisine . The Kashmiri version of the dish, however, is grilled over red-hot coals, and does not always contain boneless pieces. The pieces are brushed with ghee (clarified butter) at intervals to increase its flavour, while being continuously fanned. It is typically eaten with green coriander and tamarind chutney served with onion rings and lemon, or used in preparing a chicken tikka masala.

CHICKEN LAHORI TIKKA RECIPE

INGREDIENTS

  • 500 grams boneless chicken [ thigh portion preferably ]
  • 2 tsp lemon juice
  • Salt to taste
  • Fresh thick curd – ½ cup [ or use hung curd ]
  • Fresh cream – 2 tbsp
  • 1 tablespoon ginger-garlic paste
  • 1 or 11/2 teaspoon green chilli paste [as per taste ]
  • 1 teaspoon carom seeds (ajwain)
  • 1 teaspoon coriander pwdr
  • ½ tsp chaat masala pwdr
  • ½ tsp black pepper pwdr
  • 1 teaspoon garam masala powder
  • ½ teaspoon cumin (jeera) powder
  • ¼ teaspoon turmeric powder
  • 1 egg OR 2 tsp cornflour OR 2 tsp roasted besan helps in binding
  • Butter for greasing and brushing

METHOD

Add all the above ingredients [ except butter ] to the chicken pieces , mix well and set aside to marinate for minimum 1 – 2 hours or more or overnight in fridge.

Shallow fry the chicken pieces on both side till golden and the chiken is cooked well

Serve hot with onion rings, tomato slices, lemon wedges and green chutney.

NOTE

  1. We can also bake at 200° C for 10-15 minutes [ convection mode ] Brush with some butter ,once it is baked .
  2. Adding egg /cornflour gives a crisp coating with juicy texture inside.
