EASY AND SIMPLE PANEER CHILLI GRAVY

Chilli Paneer is a Indo Chinese Recipe but can be very well paired up with fried rice / noodles  as well.

It is one of the popular street food from the Indian Chinese cuisine. There are many ways of making it. You can make it dry, semi dry or a even a gravy .

One of the favorite dishes from Indian Chinese cuisine is Chilli Paneer which is a vegetarian version of Chilli Chicken.

In a typical Chilli Paneer recipe, the fried paneer cubes are tossed in a sweet, sour, spicy sauce. The paneer cubes can be coated with flours or batter coated and deep fried.

The dry version of chilli paneer is served as a starter or appetizer snack. The gravy version is had with steamed rice or noodles. The semi-dry version can be had as an appetizer.

This semi-dry chilli paneer recipe gives a truly restaurant style taste and flavor.

INGREDIENTS

  • Paneer cubes – 200 grms
  • finely minced garlic – 2 tbsp
  • Green chilli – 1 finely minced
  • Capsicum cubes – ½ cup
  • Cubed onion petals – ½ cup
  • Oil – 1 tbsp
  • Chilli sauce – 1 tbsp
  • Tomato ketchup – 5 tsp.
  • Soya sauce –  4 tsp
  • Vinegar – ½ tsp
  • Schezwan sauce – 1 tbsp
  • Sugar – ½ tsp
  • Pepper pwdr – ¼ or ½ tsp
  • Salt to taste
  • 3 cup water
  • Cornflour 2 ½ or 3  tsp mixed with ½ cup water

PREPARATION [ less oil recipe ]

Stir fry the capsicum and onion in 1 tbsp oil. Drain and keep aside.

Add the paneer in the same pan and cook from all sides .You can add it without frying also directly in the gravy . This way we can reduce the amount of oil while cooking .

OR

But if you want to deep fry or shallow fry then – take 2 tbsp corn flour + 2 tbsp maida + salt  + pepper pwdr dust the paneer cubes with it and shallow fry from all sides OR  make a batter of it , dip the paneer cubes and deep fry it .

Make a mixture of Chilli sauce  + Tomato ketchup + Soya sauce  + Vinegar + Schezwan sauce + Sugar + Pepper pwdr + ¼ cup water

METHOD

Heat 1 tbsp oil and add garlic + green chilli and stir fry for a min. [ colour should not change ]

Add the sauce mixture and mix well .

Stir and cook till it starts bubbling .

Add water and mix well.

Adjust salt as per taste .

Here at this point taste and check , if you feel any sauces needed as per your taste , do add .

Bring to a boil.

Once it starts boiling add the corn flour slurry and mix well.

Bring to a boil.

Let it cook till the mixture thickens and becomes glossy / shiny .

The colour of the gravy will darken and become shiny . [ the gravy has to cook well , else you will get the raw smell of corn flour ]

Now finally add the paneer + capsicum + onion and give a mix .

Off the flame and garnish with spring onion greens or coriander leaves .

Serve as a accompaniment with fried rice or just as a starter and am sure you will make this often.

NOTE

  1. Sauces has to be added as per taste .
  2. The quantity of cornflour depends on the quality of corn flour .
  3. I have kept this recipe simple , adding less ingredients .
  4. Colour of gravy depends on the colour of soya sauce . Different brands different colours.
  5. If you think the gravy is thin then add little more cornflour slurry .
  6. You can used red and yellow bell peppers to add colour to the gravy .
  7. Instead of frying the paneer cubes , we can even just toast it on a tava .
  8. If the gravy thickens , then adjust by adding hot water .
  9. Instead of plain water we can use vegetable stock for extra flavour .
