DRAGON PANEER RECIPE

Dragon Paneer Chilli is the one of the tasty food of Indochinese Cuisines. Dragon Paneer Chilli is made with crispy fried paneer tossed in Chinese sauces .

Dragon paneer can  be served as a side dish with fried rice or noodles or just serve it as a starter .

INGREDIENTS

  • Paneer sliced lengthwise – 300  gms
  • All purpose flour/ maida – ¼ cup
  • Cornflour – 2 tbsp
  • Baking powder – ½  tsp
  • Water – approximately ¼ cup
  • Garlic  minced – 2 tbsp
  • Dried red chillies – 4
  • Onion sliced- 1 small
  • Cashew nuts  – 20 nos [ split it ]
  • Capsicum thinly sliced – 1
  • Red Chilli sauce – 2 tbsp
  • Soya sauce – 1 tbsp
  • Tomato sauce – 3 tbsp
  • Sweet chilli sauce – 2 tbsp [ optional ]
  • Water – 6 tbsp
  • Salt to taste
  • Sugar – 1 tsp
  • White sesame seeds as needed
  • Finely chopped spring onion greens
  • Oil- 1 tbsp + oil for deep frying

PREPARATION

  1. Chop paneer like French fries. Sprinkle  little salt and 1 tbsp maida ,mix well and set aside for 10 minutes.
  1. Make a thick  batter of + maida + pepper pwdr + baking pwdr + corn flour + food colour + salt
  2. Heat oil in a deep pan .Add the cashew and fry till golden . remove and keep aside .
  3. Dip the paneer in the maida batter and slide in the hot oil and fry  in small batches till golden and crisp. Takes roughly  around 3  min on medium flame. Drain and keep aside .
  4. Make a mixture of all the sauces + sugar + 6 tbsp water and keep aside.

METHOD

Heat – 1 tbsp

Add the chopped garlic and stir fry for few seconds , colour should no change.

Add  broken dried red chillies and give a stir .

Add the  onion  and stir fry for a min .

Add he capsicum and stir fry for a min .

Add the sauce mixture + salt as needed and mix well.

When it starts bubbling, lower the flame and  add the fried cashews and give a mix .

Add the fried paneer strips and mix well.

Stir and cook for 1 or 2 mins till the sauce is absorbed by the fried paneer .

Off the flame and garnish with spring onion greens +  white sesame seeds.

 Serve hot.

Note once , you switch off the flame , you can add little honey for more taste .
