Eggless coconut cookies
EGGLESS COCONUT COOKIES
INGREDIENTS
- Maida – 1 cup
- Desiccated coconut – ¾ cup
- Sugar – ½ cup
- Butter – ½ cup
- Milk – 2 ½ tsp
- Vanilla essence – 2 drops
- Baking pwdr + baking soda – ½ tsp
- Desiccated coconut for coating
PREPARATION
Sieve the maida + baking pwdr + baking soda .
METHOD
Beat the sugar + butter till creamy. [ in a mixer jar ]
Add the desiccated coconut and blend again .
Remove it in a mixing bowl.
Add flour + essence + milk and mix well.
Start kneading it into a soft and smooth dough.
Refrigerate for 30 minutes. [optional]
Preheat the oven at 150 *
Divide the dough into equal portion and roll it into small balls.
Roll it over the desiccated coconut. press gently and place it on a baking tray.
Bake the cookies for 20 minutes for crunchy and crispy cookies.
Once done allow it to cool for at least 30 minutes.
Coconut cookies are ready to serve.
Store it in a air tight container.
NOTES
- Take a small portion and roll it into a smooth ball, if the ball is formed with smooth surface it means the dough is ready, else add more butter and knead it.
- If you want soft cookies bake for 15 mins.
- I have baked it in convection mode.
- You can knead it in a food processor also.
