Eggless pineapple cream cake

 EGGLESS PINEAPPLE CAKE / PINEAPPLE PASTRY

INGREDIENTS

  • Vanilla Sponge cake – 1
  • Whip Cream – 2 cup tropolite [ room temperature not frozen ]
  • Pineapple essence – 1 ½ tsp
  • Canned Pineapple pieces as required
  • Cherry for garnish
  • Pineapple juice Tropicana – 1 small can OR you can use the syrup from the pineapple tin.
  • Silver balls for decoration
  • Ice cubes – 2 or 3 tray

PREPARATION

  1. Keep the beater blades in the freezer.
  2. Bake a vanilla sponge cake following this recipe – Eggless vanilla sponge cake recipe
  3. Allow it to cool. Slice it from the centre to have 2 thin cakes.
  4. Chop the canned pineapple into small bits for stuffing in the centre and reserve big pieces for garnish.

METHOD FOR WHIPPING THE CREAM

  1. Take the ice cubes in a wide bowl.
  2. Pour the whip cream in a whipping bowl [smaller than the above one ] place the bowl on top of the ice .
  3. Start beating it with an electric beater .
  4. After 2 minutes add the pineapple essence .
  5. Again whip it for 2 – 3 mins till the cream forms peak and holds shape. [ don’t over beat ]
  6. Keep it in the fridge and use when required.

METHOD

Brush the pine apple juice all over the top portion of one slice.

Then spread the whipped cream all over on top .

Here we can spread the small pineapple bits.[ optional , I have not ]again spread the cream over the pineapple.****{you can also mix the whipped cream with pineapple pieces and stuff it in the centre }

Place the second slice of sponge cake over it.

Again brush with pineapple juice .

Spread the cream and level it ,also cover the edges .

Fill little cream in a piping bag with star nozzle and decorate as per your wish.

Place few pieces of pineapple on the top .

Garnish with a cherry .

Refrigerate it till the cream sets . [ min 2 hrs ]

Pineapple cake / pastry is ready to serve .

NOTES

  1. If you don’t have pineapple juice ,you can make sugar syrup following this recipe –
  2. Brushing the syrup or juice gives moistness to the cake. But don’t over do it else the cake will become soggy .Brush the cake from all sides of both the slices.
  3. I have used tropolite which already has sugar in it ,if using any other cream just check whether sugar is added , if not then you have to add 4 tbsp of powdered sugar while whipping the cream.
  4. Instead of tropicana juice or syrup ,you can use the syrup from the tin.
  5. The same recipe goes for strawberry cream cake .Use little red colour + strawberry essence in the cream.and fresh strawberries for garnish .
