Falsa is called Black Currant in english. Also, commonly, Phalsa. A close relative of the blue berry fruit. Known for its high vitamin c content and stomach soothing and general cooling properties.

Phalsa is infused with elevated water content, which makes this luscious summer fruit a perfect choice, for cooling the heated up body, both on a hot day as well as during illnesses. Squeeze the juice of phalsa, add a bit of jaggery/sugar + water and consume this desi sherbet to provide instant relief from the sweltering heat.

Falsa/ Phalsa Sharbat- a very healthy ,refreshing natural fruit drink to combat the heat. Falsa Sharbat- Falsa / phlasa is a delicious fruit available only during summer season specially in Uttar Pradesh region.

The juice also act good as a brain tonic and if applied on skin helps to cure eczema, pimple, acne and boils 

Falsa is such an amazing fruit that it protests the heart, purifies blood and regulates blood pressure and cholesterol levels. It also helps prevent cold and coughs and also relieves them if one gets a cold or cough. Falsa juice aids in relieving digestive problems like excess acidity and indigestion.

Traditional way of making this sharbat is to mix falsa and sugar and keep it covered for an hour so the phalsa become soft. Then the falsa mixture is mashed using fingers so it will turn into a soft mash. Then some cold water is added and then it is strained through a strainer or a fine muslin cloth . Then black salt,cumin powder ,crushed ice is added and served chilled.

INGREDIENTS

  • 250 gm Falsa/ Phalsa / karvand
  • 6 tbsp Sugar
  • 1 tsp black Salt
  • ½ tsp  Roasted Cumin Powder
  •  Mint Leaves for garnish
  • 1/2 tsp Pepper Powder
  • 3 to 4 cup chilled water as the consistency you want
  • Crushed ice / ice cubes top serve

METHOD

Wash phalsa with enough water.

Take a blender jar and add the phalsa ,sugar and 2 cup of water.

 First churn it slightly on low speed OR pulse beat in a mixie . [ else the seeds will also grind ]

Now strain it through a fine strainer , by mashing it well and collect the juice in a bowl.

Now add 2 more cup of water +  pink salt + roasted cumin powder and mix well .

Garnish with  mint leaves .

As we have used chilled water , you can serve it directly .

Else add ice cubes or refrigerate till chill and serve .

NOTES

  1. Instead of black salt we can add regular salt but in less quantity.
  2. We can also add chaat masala / pepper pwdr .
