WINTER SPECIAL SOFT GINGER BURFI / GUJARATI AADU PAAK /ADRAK HALWA

Aadu Pak also known as Ginger Pak or Adrak Ki Barfi – A must try Winter Special Healthy Recipe made from Fresh Ginger .
Ginger has many health benefits too. Ginger is very beneficial in Cold problems and especially beneficial in throat infections. It is also suitable for children suffering from cold. Eat a small piece of Aadu Pak every day during the winter season will help to heal faster.
Ginger reduces Cold and Flu – Winter is the best climate to have ginger recipes and this will automatically stabilize your body condition and keep you warm. It enables you to sweat once you consume it and this is said to be good for your body. So, if you are suffering from a bad cold and flu all you need to do is to prepare some ginger recipes and you will feel better in no time. This is one ginger recipe from our kitchen to yours .
INGREDIENTS
- Desiccated coconut – 50 grms
- Ghee – 3 tbsp
- Mava – 100 grm
- Rava – 30 grms [ 21/2 tbsp ]
- Ginger – 250 grms
- Nutmeg pwdr – 1/4 tsp
- Cardamom pwdr – ½ tsp
- Poppy seeds – 1 tbsp
- Sugar – 150 grms
- Water – ½ cup
- Yellow food colour – a drop [ optional ]
- Grease a tray with ghee
- Thinly sliced almonds and pista for garnish
PREPARATION
Wash the ginger well , peel the skin , chop it and grind into a fine paste .

METHOD [ Use a non stick pan ]
Heat 1 tbsp ghee in a pan .
Add rava and roast till aromatic .
Add desiccated coconut and again roast on low flame till aromatic.
Colour should not change .
Remove and keep aside.
Add 1 tbsp ghee in the same pan , add the mava and mix well .
Stir and cook till aromatic , remove and keep aside.
Heat 1 tbsp ghee and add the ginger paste and mix well.
Stir and cook on low flame
Cook till a lump of mixture is formed and starts leaving the pan .
Now add roasted rava + mava + dessicated coconut and mix well
Mix till all blend well, off the flame , cover and keep aside .
Take sugar + water in a pan and make sugar syrup of one string consistency .
Add food colour and mix .
Lower the flame and add nutmeg pwdr + cardamom pwdr + poppy seeds and mix well.
Add ginger mixture and keep on low flame .
Mix well.
Cook till the mixture thickens , becomes transparent and leaves the side of the pan .
Transfer the mixture to the greased tray .
Press and spread well .
Finally top it with pista and garnish and press.
Immediately give slits of any shapes with knife when the mixture is hot .
Keep aside for sometimes , till it cools down completely and sets .
After cooling, store in airtight container and consume within 4 – 5 weeks.
NOTES
- Instead of sugar we can use jaggery .
- We can also add fried and crushed edible gum /gond to give crunchy texture .
- Instead of grinding some grate and add the ginger .
