JACKFRUIT CHIA SEEDS PUDDING

INGREDIENTS
- 1 cup milk/ coconut milk /almond or cashew milk /soya milk
- 3 or 4 tbsp chia seeds
- Pinch of cardamom pwdr or just a drop of vanilla essence
- 1 tbsp – Honey /brown sugar/ jaggery powder / maple syrup or any sweetner as per taste and the sweetness of the fruit
- ½ cup chopped ripe jackfruit
- Finely chopped dry fruits to garnish
METHOD
Take chia seeds + any sweetner + cardamom pwdr / essence in a bowl and mix well using a whisk .
Gradually add milk and keep stirring to avoid any lump formation .
Set aside undisturbed for 15 to 20 mins to allow the seeds to bloom .
Once the seeds bloom completely , give it another stir/shake to break up any clumps of chia seeds.
Cover the bowl with plastic wrap and refrigerate 2 hours or overnight.
Serve chilled topped with jackfruit bits + dry fruit .
NOTES –
You can use almond milk / soya milk /coconut milk /cashew milk.
Instead of using sugar , blend and use banana as sweetner .
Use 3 tbsp chia seeds for goey consistency and 4 tbsp for thick consistency .
