Papdi chaat
PAPDI CHAAT
FOR PAPDI
INGREDIENTS
- Maida – 1 cup
- Oil – 1 tbsp
- Salt to taste
- Oil for deep frying
- Ajwain – 1 tsp [optional ]
- Any small lid or circle mould
METHOD
Take flour + 1 tbsp oil + salt + ajwain in a big plate and mix well.
Gradually add water and knead it into a stiff dough.
Cover with a damp cloth and keep aside for 30 mins.
Knead it again for sometime.
Dust the rolling board with dry flour.
Take a portion of the dough and roll it into a thin sheets .
Take a small round cutter and cut small circles.
Prick the circles with fork ,so that the puri doesn’t puff.
Deep fry it till golden colour on both sides.

INGREDIENTS
- Papdi
- Mashed potato – ½ cup
- Green chutney
- Sweet date tamarind chutney
- Garlic chutney [ optional ]
- Finely chopped onion – ¼ cup
- Boiled chana – ¼ cup [ optional ]
- Beaten thick fresh curd – ¼ cup
- Finely chopped coriander leaves
- Chaat masala
- Chilli pwdr
- Roasted Jeera pwdr
- Nylon sev
- Lemon juice
METHOD
Crush the puri into small pieces and arrange it in a plate.
Add the mashed potatoes + boiled chana .
Sprinkle the chaat masala + chillipwdr + jeera pwdr .
Drizzle the sweet chutney + green chutney + garlic chutney all over as per taste.
Add the chopped onion .
Add the chopped coriander leaves.
Drizzle few drops of lemon juice .
Garnish with lot of fine sev and serve immediately .
NOTES
- It has to be served immediately or the puris will become soggy
- The chutney goes as per your preference ,what you want more and what you want less ,so adjust accordingly.
- You can either add mashed potatoes or chopped boiled potatoes or even fried potato cubes.
- You can also add finely chopped tomato .
