Raw banana fritters recipe
RAW BANANA FRITTERS / KELA BAJJI / BHAJIA
INGREDIENTS
- 2 big Raw banana .[ peeled and sliced lengthwise or roundels and soaked in salt water ]
- 1 1/2 cup of besan (gram flour).
- 1 tbsp of rice flour .
- Salt to taste.
- Pinch of asofeatida .
- 1 tsp chilli pwdr.
- Oil for deep fry.
- Generous pinch of cooking soda (optional )
- (You can also add ajwain / finely chopped coriander leaves /chaat masala).
METHOD
Sift besan / gram flour twice .
Take gram flour + rice flour + chilli pwdr + asafoetida + cooking soda if using + salt in a mixing bowl .
Mix all nicely , add water gradually and make a medium thick batter .
Mix it well , ensuring there are no lumps in the batter.
The batter should be nor too thick nor too thin.
If batter is too thick add little water if it gets too thin add more gramflour. I prefer thick batter for fritters.
Put oil in a deep pan and place on high heat.
Once oil is hot reduce the heat to medium.
Remove the banana slices from the water and pat dry it.
*** pat drying is important else the batter will not stick to the banana.
Dip each sliced raw bananas into the batter evenly from all sides .
Slide it into the hot oil .
Deep fry until crisp and light golden brown from both sides.
Remove excess oil from fritters. Place them on absorbent napkins to absorb excess oil.
Serve fritters hot with tomato sauce, coconut chutney, peanut chutney and green chutney.
