Raw mango papad / kaccha aam ka papad
RAW MANGO PAPAD / KACCHA AAM KA PAPAD

INGREDIENTS
- Raw mango cubes – 1 big
- Black salt /normal salt – generous pinch
- Chilli pwdr – ¼ tsp
- Black pepper pwdr – ¼ tsp
- Water – 1/4 cup
- Roasted jeera pwdr – ¼ tsp
- Chaat masala – ½ tsp
- Green food colour as required
- Sugar – ¼ cup or as per taste
- Grease a plate with
METHOD
Peel the mango and chop into cubes .Discard the seed
Take the water + mango cubes in cooker and pressure cook upto 1 whistle .
Cook on medium flame till the mangoes soften and become mushy .
Open the cooker and allow it to cool .
Transfer to a mixie jar and blend into fine puree .
Strain it into a pan .
Add all the spice powders + sugar and mix well.
Cook on medium flame till the mixture thickens and becomes shiny .
Off the flame .
Spread it on the grease plate into medium thin layer . [ not very thin ,as it shrinks on drying ]
*Very thin layer results in dry papad .Medium layer results in bit pulpy texture .
Sun dry or fan dry it for 1 day .
Mine just took 1 day .
Take a knife and slice it as required .
NOTES
- Adjust spice as per taste .
- I added less sugar for a sweet and tangy flavour .
