Sesame dry chutney powder
SESAME CHUTNEY POWDER / TIL KI SUKHI CHUTNEY
“Black sesame seeds are a good source of energy due to the high fat content. They contain healthy fats like polyunsaturated fatty acids and Omega-6. They also contain fiber, iron, calcium, magnesium and phosphorus.”
The black sesame seed can help in curing constipation due to the high fiber content and unsaturated fatty acid content. The oil found in the seed can lubricate your intestines, while the fiber in the seed helps in smooth bowel movements.
Sesame seeds are a good source of healthy fats, protein, B vitamins, minerals, fiber, antioxidants, and other beneficial plant compounds. Regularly eating substantial portions of these seeds — not just an occasional sprinkling on a burger bun — may aid blood sugar control, combat arthritis pain, and lower cholesterol.
INGREDIENTS
- Black sesame – 1/4 cup
- Dry red chilli – 2
- Garlic – 2
- Channa dal or urad dal – 1 tbsp
- Asafoetida – generous pinch
- Tamarind – a tiny piece [ optional ]
- Jaggery – a very small piece [ optional ]
- Oil 2 drops to roast the chilli
- Salt to taste
PREPARATION
Dry roast all the ingredients separately one by one on low flame without burning the ingredients.
METHOD
Dry roast the garlic with skin till spots appear on low flame .Peel of the skin.
Dry roast the sesame on low flame for 2 – 3 minutes .
Dry roast the dal till golden brown.
Add few drops of oil and roast the red chilli .
Allow the ingredients to cool .
Transfer to a mixie jar add salt + asafoetida + tamarind + jaggery and grind it to a coarse powder .
Store it in airtight container .
Serve as accompaniment for SouthIndian breakfast / curd rice /tamarind rice /khicdi / bhakri or any rice recipe .
NOTES
- U can try this recipe with white sesame also.
- You can increase the quantity of dals .
- U can take ½ of black and ½ of white sesame.
- You can mix this powdr with rice and ur sesame rice will be ready .Refer here – Sesame rice
- U can avoid the dal ,I added as it gives a crucnchy texture.
- U can add wet coconut and make liquid chutney from it and temper it .
- Don’t burn the ingredients while roasting.
- You can also add roasted coconut or tamarind or a piece of jaggery or curry leaves .
- You can add the garlic with skin. U can add more garlic .
- Instead of grinding you can pound it .
- You can store for 15 – 20 days in room temperature and in fridge for months .
