Sindhi sev burfi recipe

INGREDIENTS

  • Feeka sev  [unsalted sev ] -500 grms
  • Unsweetened mawa – 200 grms
  • Fresh paneer crumbled  – 50 grms
  • Sugar – 250 grms
  • Milk / sugar – 250 ml
  • Ghee – 2 tbsp
  • Rose essence – few drops
  • Cardamom – ¼ tsp
  • Few saffron strands soaked in 1 tbsp milk OR few drops of yellow food colour
  • Unsalted pista thinly sliced – 1 tbsp
  • Thinly sliced almonds – 1 tbsp
  • Thin sliver edible sheet [varq ]
  • Edibe rose petals for garnish  – few [ optional ]
  • Greased tray

Heat ghee in a heavy bottom pan .

Add the grated  mawa and give a stir .

Immediately add grated paneer and mix well .

Lower the flame ,add milk + sugar  and mix .

Allow it to boil.

*The milk will look like its curdled ,it is absolutely ok . Proceed ahead with the recipe ,don’t worry .

Once it boils ,simmer for 2 mins on medium low flame .

Add the cardamom pwdr + essence + saffron and give a mix.

Add the sev and gently mix for 1 min.

Now cook more for 1 min till there is not much moisture and the mixture thickens .

Don’t over cook or over mix , the sev will become mushy .

Immediately off the flame .

Transfer  the mithai on the greased tray and spread it evenly .

Garnish with pista , almonds and silver sheeet

Let it cool properly. Refrigerate for sometime so that it sets well .

Cut  and serve. It is difficult to slice as it is a delicate sweet.

It just melts in your mouth .

As we have used milk , consume it within a day .

NOTES

  1. Instead of milk ,we can use water .
  2. You can replace paneer with mava .
  3. Instead of mava , we can use reduced milk .
  4. Rose essence is must.

HOMEMADE FEEKA SEV

feeka sev recipe / Unsalted sev recipe

INGREDIENTS

  • Besan – 350 grms
  • Oil – 3 tbsp
  • Water to knead – ½ to ¾ cup
  • Oil to deep fry .

METHOD

Make a tight dough of besan + oil  + water .

Heat oil for deep frying .

Now take a small portion of dough ,sprinkle little water , knead a bit and fill in the chakli press with medium size hole . [ not very fine holes like nylon ]

Deep fry the sev .
