Ladi pav is a common food item in Mumbai and is used in many recipes, especially roadside snacks. As the name suggests, it comprises of three or four rows of pav or bread merged together, arranged in slabs or “ladi“. It is soft bread, arranged in two contrasting colours.

 Ladi literally means a group or in continuity and Pav refers to Bread in Hindi.

INGREDIENTS FOR MAKING THE GEL

  • Flaxseeds 1tbsp
  • 1 Cup Water

FOR MAKING THE LADI PAV

  • 1/2 Cup Warm water
  • 1/2 Tsp Yeast
  • 1 tbsp Honey
  • 75 gms Whole wheat flour
  • 150 gms Semolina
  • Salt pinch
  • 1 tbsp Milk Powder
  • 2 Tbsp Flax seeds Gel Water to knead the dough
  • 1tbsp UnFlavoured Oil

What are Flaxseeds?

Flax seeds (Alsi ke beej) are small grains which are a good source of antioxidants, fibers, omega-3 fatty acids (healthy fat), protein and various minerals and vitamins in small quantity.

It is supposed that taking flaxseed in mild quantity can lower the risk of diseases like Cancer, Blood pressure, Cholesterol, and Diabetes.

WHAT IS FLAX SEEDS GEL

This goopy material, known in the food science world as a mucilage, or gel, can be drawn out of the seed in several ways and used as an egg replacement that is suitable for many vegan baking applications. Flax gel is a hydrocolloid, which is defined as a substance that forms a gel when combined with water. You can use this gel as an egg replacer in cakes, cupcakes to get fluffy texture without any extra flavor. 

Tips:

Gel amount, thickness
quality depends on the quality of your flax seeds too. Do not use old seeds for making the gel.

Do not use too small or too big hole strainer. Big hole strain flax seeds too while with small hole strainer you will not get the gel out of it.

If you are seeing gel having less liquid (water), you can slowly add little more water to it.

The gel should not be so liquid otherwise it can not be whipped to make the meringue. (Carefully pay attention to the fluidity of gel)

Uses:

In Baking Cakes:

You can use this gel as an egg replacer in cakes, cupcakes to get fluffy texture without any extra flavor. It is a chemical free way and easy to make.

In making of Meringue:

You can replace eggs and vegan aquafaba from chickpea with this flax seeds gel in the making of vegan meringue. This meringue you can use in making of vegan macarons and meringue cookies.

In Skin glowing toner or gel:

You can also use this gel for glowing skin as these flaxseeds contain omega-3 acids which are good for glowing skin. It can be used as a Lotion, Toner or as a part of Face pack ingredient.

In Shiny and Healthier Hair:

This flaxseed gel you can apply on hair as hair serum or hair pack. It gives shine and volume to your hairs like an egg does.
