Spicy prawns roast [ kerala style ]
SPICY PRAWNS ROAST [ KERALA STYLE ]
INGREDIENTS FOR MARINATION
- Prawns cleaned without shells – 250 gms [ small or medium size ]
- Chilli pwdr – 1 tsp
- Turmeric pwdr – ¼ tsp
- Ginger garlic paste – 1 tsp
- Lemon juice – 2 tsp
- Salt as per taste
METHOD
Remove the shells , clean ,devein and wash the prawns well .
Marinate the cleaned prawns with all the above ingredients. Marinate the prawns for minimum 30 mins.
Heat 2 tsp oil in a pan , add the marinated prawns and cook the prawns on medium low flame for 5 mins till the prawns sweat and complete water is evaporated.
INGREDIENTS FOR ROASTING THE PRAWNS
- Oil – 1 ½ tbsp
- Onion – 1 big finely sliced
- Ginger garlic paste – 2 tsp
- Chilli pwdr – 1 tsp
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 2 tsp
- Garam masala – ½ tsp
- Curry leaves – few
- Lemon juice – ½ tsp
METHOD
Heat oil in a pan or kadai.
Add the sliced onions + curry leaves and fry till golden brown.
Add ginger + garlic paste and fry till raw smell leaves.
Add chilli pwdr + turmeric pwdr + garam masala pwdr + coriander pwdr and fry for 1 min.
Add the cooked prawns and mix well and cook for 3 – 4 mins on medium flame till the prawns is coated well with the masalas .
Once done off the flame and drizzle the lemon juice.
Transfer to serving dish .
You can garnish with finely chopped coriander leaves or few curry leaves.
NOTES
- Cook the prawns on low flame.
- Kashmiri chilli pwdr adds more colour.
- You can also add green chillies.
- Adjust masalas as per your taste.
- Tastes good with coconut oil .
- You can add 1 more onion for more masalas.
- You can also pepper pwdr.
- Once you transfer the prawn roast to the serving dish, add cooked rice to the pan and mix well and have it.
