Sun dried onions /less oil birista for biryani

INGREDIENTS

  • Onion – 1 kg OR more
  • Summer season

METHOD

Peel the onions.

Rinse and clean the onions and pat them dry after.

Slice the onions thinly and  evenly so that they are dried consistently.

*Slice onions as thin as possible. … thinner the slices, the more quickly they’ll dehydrate/ dry

*Separate the rings for fast drying

Place them in a rack / big plate / metal sheets and position them in a location with direct sunlight.

Sundry for 3 to 4 days till they become brittle . It should be easily crushed with hands .

USES OF SUN DRY ONIONSSundry onions are used for making barista .Birista is used in Indian cooking for veg or non veg gravies , biryanis and any gravies .Add dried ,onions directly to foods: Add dried onion flakes and minced onions directly to simmering soups and stews. They will reconstitute with the liquid and add onion flavor. Use onion powder in dry herb mixes: Powdered onion dissolves and combines easily to provide flavor.

ONION BIRISTA – heat 2 tsp oil ,add 1 cup dried onions and fry till golden.Regular barista made with fresh onions require lot of oil and time consuming also.Here in 2 tsp oil we can fry 1 cup barista in less than a minute.
