JAMAICAN JERK CHICKEN

The most loved recipe in the Caribbean. Jerk Chicken is seasoned with spices that give the dish a smoky taste. The smoky and hot taste comes from having the chicken marinated in hot spices overnight or for some few hours.

INGREDIENTS:

  • Chicken Thighs /Drumsticks/ boneless breast  – 500 grms
  • Onion – 1 chopped toughly [ shallots tastes better ]
  • Spring onion + greens  chopped – 2 tbsp
  • Ginger + Garlic paste – 1 tbsp
  • Green Chillies – 3 or as per taste
  • Red Chilli Powder –  1 tsp or as per taste
  • Pepper pwdr – ¼ tsp
  • Garam masala powder – ½ tsp
  • Nutmeg pwdr – 1/8  tsp
  • Honey –  2 tbsp
  • Brown sugar – 1 tbsp
  • Oil / olive oil – 2 or 3 tbsp
  • Lemon Juice – 2 tbsp
  • Dark Soya  Sauce – 1 or 1 ½ tbsp
  • Salt to taste

NOTE – Instead of garam masala pwdr and  nutmeg pwdr , use 1 tsp of  ALL SPICE PWDR

As a substitution for 1 tsp of all spice pwdr , you can use ½ tsp ground cinnamon +  11/2 tsp ground cloves + pinch of ground nutmeg.

METHOD

Clean , wash rinse and pat dry the chicken . Make slashes all over it. 

Take all ingredients except chicken in a blender and make it into a fine paste.

Pour marination over the chicken  and apply it well all over inside the cuts .

NOTE – keep the remaining marinade to make a dip .

Leave it to marinate  for mininmum 2 hrs or overnight .

More the marination time better the taste and texture .

Pre heat the oven to 350 Degrees F (180 Degrees C)

Place the chicken breast on a baking tray .

Bake for 50 – 60 minutes until the juices run clear.

For more dark colour , grill the chicken for 2 mins

Transfer the cooked chicken on a serving plate and cut into slices. 

Serve with the reduced marinade or any dips / sauces and salads .

I have also used potato roundels .

NOTE – add the remaining marinade in a pan and simmer for few minutes until it is slightly thick and raw smell of ingredients leave.

You can add 2 tbsp water / pineapple juice / orange juice to the marinade.

INTSEAD of baking in oven , I frefer to grill it in a open pan , which hardly takes any time  – follow the below recipes –
